Putting a dowel on the tang for an easy fit up is such a clever idea, I've watched so many knife making videos and trying to cut out a perfectly rectangular hole for the tang is always something that invariably goes wrong and takes ages. What a clever idea!!!
The reason this isn't done is because its mechanically unsound. The only connection between the tang and the handle is the glue/epoxy between that dowel and the handle. Bang it a few times and that connection will break resulting in the knife handle coming free of the blade. It will either start to turn, or come flying out during use. There needed to be a set of pins through the tang to hold everything together mechanically.

It would be nice to know when is the right time to use a sandblaster vs rust remover...or can both be used in each case? If yes then would it not be faster and better to use sandblaster in the initial phase of the video? Lovely work as always! Kudos from India.
Have you ever thought about silver soldering the joint between the bolster and the blade? It would keep bacteria from growing in there. And it looks very cool. :) Enjoyed your video! :)
New profile and finish look fantastic, although I’m concerned about the cuts you added into the tang. I know you added them to increase the strength of the anchoring to the handle, but it might also increase the chance for stress fractures to form near the cuts.
Beautiful restoration. I was happy to see you scrubbed the rust away with a proper brush, not a toothbrush as I've seen on other channels. It drives me bonkers.

Indeed. But an easier way would just be wrapping the tang with electrical tape. At least that's what I do.

I think that knife is begging for a 15deg hollow ground bevel. I bet the tomato slicing would go much better.
