    I just made this last night for July 4th. It was awesome! However I used half peanut oil half canola oil for frying (instead of lard) and I added double the brown sugar because I wanted a sweet/spicy mix. Whole family loved it. Looking forward to trying more of your recipes.

      It's really not that hard compared to other things he's done. He didn't use any specialized tools and it's essentially a jazzed up shallow fried chicken recipe. I say this as a person lacking a food processor or a stand mixer.

    Fun Fact: KFC double dips for their Extra crispy chicken, this recipe feels really similar to when they came out with the Nashville hot back in 2012 when I worked as a high school fry cook. Super awesome vid!

      @@corwinorr It's to keep the sauce from becoming a puddle under the chicken. Eating the bread is a dangerous game. A tasty but dangerous game. It tends to be almost twice as hot as the chicken itself.

    Thanks for the vids! And do you think you could do a video on balancing out flavors in a dish? I always hear about stuff like "add acidity to cut the richness" but I don't really know much about it.
    I know it won't necessarily be a recipe video but I think that'd make a good Basics with Babish video. Thanks again!

    Note: Hattie B's dip their chicken in the oil mix making it so the bread also gets soaked in the spicy goodness.
    I work in Nashville and we'd go about twice a month to Hattie's. I would LOVE to see their Pimento Mac & Cheese recipe duplicated. That is heavenly.
    While Hattie B's is it iconic, I do think Prince's Chicken is better chicken.

      I just pick and choose things to incorporate. Also watching food truck videos or videos of Indian foodstands can actually be incredibly helpful and provide tricks and tips that you can incorporate into your cooking technique. Those food trucks and stands rely on quick pace so they have certain techniques that makes their time more efficient.

    I live in Nashville, and though Hattie B’s is extremely delicious, Prince’s is the original and it uses lard instead of oil with the cayenne.

    I made this and it turned out amazing! Make sure if you're doing this on your stove you put the same amount of oil as babish does, chicken ideally half submerged, otherwise it starts to brown the breading unevenly.

      Totally came here to say this. Hattie B's may be the mainstream and one most people are familiar with, but Prince's invented hot chicken. I feel like they should at least get that recognition. Plus, Hattie B's has better sides, but Prince's chicken is miles ahead (with Pepper Fire a close second).

    I attempted this amazing recipe but I sous vided the chicken thigh at 150 for an hour and then did the same breading step. Fried it real quick to get it golden brown and made the sauce the same way. It was dang good.

      I live in Nashville. It is N O T Helen's wtf. That's one of the worst places.. Lol. I'm in a Facebook group for Nashville hot chicken. I did a poll a while back. Slow burn was by far the highest rated. Prince's and boltons is pretty up there. A lot of people like hurts hot chicken and 400 degrees. Subculture has been hugely popular lately as well and definitely one of the best.

      Hattie b's definitely aren't the masters but they aren't bad. They target a very specific group of people in Nashville. Some people say mainly white people, but I've seen people of all races that like it.. Personally, i like the dry rub option at slow burn.
