Since this is the key of E, E is the root, or 1 chord. There's different ways to play an E chord at different places of the fretboard, just like you said (and also different variations of E chords). The 5 chord is a B. and the 4 chord is a Bb (B flat). Same as with the E, there's different ways to play the B chord and the Bb chord.
Obvious you're a traditional trained musician. However, the idea of CBG's is simplicity. G,D,G tuning gets 1 finger bar chords etc. Fastest route to playing along with a song is the goal for mist of us.

I’d of thought that the idea of any musical instrument is to get the most out of it that you can. This is great and well worth an hour study and practice for the next few days to get it under your belt.
