These videos are like memories from my childhood. Thank you so much for sharing them. My grandmother use to put a piece of the stalk/core in some jars. Whoever got it, got the treasure.

Thank you for posting this video. We considerably older than your beautiful family, and have been gardening for years. But we have never made Kraut before.
We never had a store bought chopper to chop up Cabbage and hardley did any one else have one. Our choppers were empty cream cans mommy would cut the bottom or top out of and those cans worked like a charm to chop up cabbage. We used large dish pans to put the cut up cabbage in and then we would go chopping away with the cream cans for as long as it took to chop the cabbage up.

Finley Bob puts his whole heart and soul in chopping! And his big sisters ain't no slouches either! A joy to watch you folks working together for the benefit of the whole family. Sauerkraut is a great probiotic, no need to buy probiotic capsules! We used to shred ours instead of chopping it , then fermented it in large stoneware crocks until it was ready for canning - Mom used to say "Dale gets to do the shredding" like it was a special job for me. Huh! It was the hardest job! Being the oldest ain't always that great! You bring back great memories!
@@FlutyLickHomestead We also made dill pickles in crocks - the backporch was half closed/ half screened, and it smelled of fermenting cabbage and cucumbers - not totally unpleasant when you knew what it meant down the road! Like your kids, I learned to work for the family good at an early age - Mom and Dad did a good job raising us - all 3 of us knew how to can, freeze and cook by age 10.

I've always wondered what those chopping tools were for... As a kid (in the 1950's) I would see those things in just about every kitchen, but now days you don't see them very often. I guess you could use a shredder/grater as well. Good video, y'all!

My friends save me quart glass pickle jars for my kraut making. I sterilize the kids and jars, pack them with cabbage, add the salt and put the lids on. When we use a jar I just throw it away. Works very well, since the jars don’t seal anyways. Been doing that for years and have never had a bad jar of kraut. I figure if some used to fix kraut in a crock with a plate weighted down with a rock, a good used clean jar will be fine and probably a lot more sanitary. Mom would use mayonnaise jars too, but mayonnaise usually comes in plastic jars now. I have never used the pickle jars twice because the lids rust. May have to try the wax paper trick to see if I can get at least a couple years out of the jars. Then I can recycle the glass. Works for pickled/brined corn too,
I’ve got tons of the old glass mayo jars my aunt saved everyone she ever got I think and I’ve accumulated every old lady’s jars around me haha those pickle jars are good idea! At least you can use them once before ya have to trash

I'm from Knott co. Ky not very far from you and I have learned a lot from your videos, Thank you. I would like to know if you have a recipe for fried corn. My Grandmother made it and I could eat a washtub full of it, the last time I had any was in the 1970's after my Grandmother took sick. I made a big mistake by not learning from her, you don't know what you have until it's gone. I just made this today. Got 4 1/2 quarts from 2 average cabbage heads. Set them all down in my big crock for.that nice cool temp. Question:.I just saw your pinned note about.the lids. Homestead Solar power &Projects we’ve had some crazy weather this year. Went from lot of rain to a drought and super hot. We’ve been canning beans a lot now and tomatoes starting in.
Honey, I only put 1 teaspoon salt in the jar per quart and not 1 tablespoon. I am afraid the tablespoon might be a bit too much. Mom taught me how to make it and I am 67 years old also from the mountains of Tennessee. Made it that way all my life. The hot water is great, that is the way I do it. You can also omit some of the pepper and see if you like it better that way. The salt will ferment it in 2-3 weeks. God bless you just try a jar or two of it that way next time.
Thanks for the great video, Jared. If I were to want to only put up in pints rather than quarts (there is only me and the wife) would you recommend cutting the ingredients (pickling salt and vinegar) in half or leave it the same as for quart jars? Thanks yall from LA.....lower Alabama.
Ok. I did up a batch of this on 2/26, so thats maybe 3 weeks ago. I set the jars down inside my big old lidded crock. Checked it again last night and I can smell it working. I peeked under the wax paper and I can see some of the cabbage floated above the water level. Is that normal?? I typically ferment kraut in that crock so your method is new to me. Once it's done, I water bath it so this method is a bit different than what I'm used to.
Kerry Taylor some times ours does float some, should be good. Our turns out perfect this way, eating a jar of it in about 5 minutes actually! Hope it does well for ya
I watched this video then some others. Theirs seems a LOT more work, I'm going to try yours. One thing they mentioned is that the volume of cabbage decreases as it ferments. How much of the 1 quart jar is still cabbage when it is done? Half? Any update on how it came out?

No after about 6 weeks just tighten the lids up no processing

My Grandfather used to make it in a old wooden whiskey keg, lay a piece burlap on top with concrete block. Tasted good, but cellar stunk

Just finger tight! Then when it’s done working off in about 3-4 weeks you can snug the kids up. Must be loose for gas or extra liquid to escape

Ok. I did up a batch of this on 2/26, so thats maybe 3 weeks ago. I set the jars down inside my big old lidded crock. Checked it again last night and I can smell it working. I peeked under the wax paper and I can see some of the cabbage floated above the water level. Is that normal?? I typically ferment kraut in that crock so your method is new to me. Once it's done, I water bath it so this method is a bit different than what I'm used to.
Kerry Taylor some times ours does float some, should be good. Our turns out perfect this way, eating a jar of it in about 5 minutes actually! Hope it does well for ya
I watched this video then some others. Theirs seems a LOT more work, I'm going to try yours. One thing they mentioned is that the volume of cabbage decreases as it ferments. How much of the 1 quart jar is still cabbage when it is done? Half? Any update on how it came out?
Almost a full jar, don’t loose much! After about a month it was awesome!
