I hope to become this good at Japanese! I'm learning at uni and sure certain phrases come to mind or are used in my dreams, but it's hard to believe I'll ever get to that level of fluency

It’s a common thing. Once you know a language well, you just start thinking in it, especially if you hear it everywhere. For example, I think in Romanian and English interchangeably.
