It's because for these illusions, you would often need an absolutely perfect angle... meaning, it won't work in a normal circumstance, but he can put the camera at the absolutely perfect angle meaning you can actually see the illusion the way it's meant to be seen.... but in normal situations, when you walk into a room, you won't be at that exact perfect angle and the illusion won't work.
