It could be for the sort of personas they project - they're not their 'true' selves on camera all the time. Essentially, they act as a caricature of themselves. Or, they could also not feel comfortable with being shown in a certain light. Sometimes it could also come down to there were funnier bits to be put in, and so certain things had to be sacrificed.
