Unfortunately yellowing of books will just happen no matter what but especially with age. If you wanna get technical "lignin" is a part of wood therefore a part of paper. The more lignin a paper has (usually in cheaper books or newspaper) the faster it yellows. But sunlight, air, moisture, etc makes the process faster
you should get moisture absorbers to put behind your books for each shelffff
check if your dollar tree has them bc sometimes they have some
could also just be sun damage honestly
