  • Echor (pronounced "ey-chore") is unripe kathal or jackfruit in Bengali. It is a meaty vegetable that, after mangoes, is easily the best thing about summers for us. No wonder echor is referred to as গাছ পাঁঠা (gachh patha, meaning tree goat-that is mutton that grows on a tree) in Bengali.
    This echorer dalna recipe shows two variants - one niramish (that is vegetarian and with no onion or garlic) and another that is flavoured with chingri, i.e. small shrimps. We like to have this with a tok dal with green mangoes and rice. If you have never tried echor, we highly recommend giving this a try. The cutting and cleaning takes a little bit of patience, but it is not as difficult as it looks-and the end results are more than worth the toil.

    Here in Kerala,we use jackfruit to make different dishes including main course, snacks and chips. Bengali style is obviously tempting. Jackfruit is underrated ever.

      @@Alex-sm9yy Yesterday we cooked raw jackfruit, younger than that in the video, with slightly different way without prawn and used ingredients of bengali mutton curry. It was very delicious.

      Jackfruit is a very famous veggie in North India. Especially in Bengal, Bihar, Chhattisgarh and Orissa.

    I love how Bengal and Kerala have similar recipes and in a lot of ways, ideologies. Definitely one of the best channels I have come across and follow ardently.

      Even Bengalis and Mallus have similar face features. Our food and lifestyle are very similar. I have lived my whole life in Chhattisgarh as a migrant Bengali, but visiting my grandparents's home in summers was a very common thing. That one time when I went to Kerala, it seemed I was back in West Bengal.... I mean except for the scenic beauty where Kerala is miles ahead. All my time in south I was mistaken for a Mallu, and I would often mistake older Malayali ladies as Bengalis.

      Sinhala originated from Bengali and also have Odia influence.

    Echor chingri is an all time favourite in our home, but we add onion & garlic too (sometimes even a lil bit of yoghurt, for a tangier version).
    And yes, tok dal (aam dal) and summer are complementary to each other in Bengal 💕💕💕

      Did you boil the canned echor beforehand? Or just washed and added it with the moshla? Am confused as I have no experience whatsoever with canned echor 😕

    @bong eats a suggestion from my end. Adding a little sugar while boiling the echor (alongwith turmeric and salt) goes a great way to remove the pungency or kosh kosh bhab (you know what I mean) of jackfruit. It also makes it less sticky when taking out the echor. Rest, as usual terrific!! 😀

      It's kinda one of those anesthetics u know... I grew up watching my thammi and her mom using it to put salt.... Because back in old days they didn't have a spoon so I believe they came up with a shell instead..... Seeing Bongeats using it brought back so much childhood memories.... And also inspiring how they blended and kept this beautiful small things in what they do....I believe they use it coz like me, they must've seen their grandmother using it.

    Bong eats you guys have been so great, the way you present, and I have turned into a decent cook during the quarantine period - have tried your mutton biriyani, sukto, chocolate cake and they have been my go to. But in order to follow your recipes I really need to invest in a weighing scale otherwise I spend too much time with calculations.
