The "bad coffee" is quite a mystery phenomenon. However, I can shed some light on it. So, freeze drying removes all moisture and kills literally everything in the batch, as long as it is sealed and packaged properly. It also messes up the molecular structure of some things. If any moisture gets back in the coffee after it is freeze dried, the caffeine separates from the coffee due to the freeze drying destroying the bean cells and makes white spots which looks like mold. It also turns the coffee dark black. This also used to happen to the old taster's choice coffee used in much older MREs. The coffee is perfectly fine to drink like this and is not spoiled. The closest analogy I can think of is bloom on chocolate, where the fats separate and discolor the chocolate. If you didn't know any better, you would think the chocolate is bad, but it is perfectly fine. It just doesn't look as appetizing.

Very cool Jerms. This is one of the newest MCW'S I have seen. I love these. I still have one here somewhere. The only problem is the correct water amount sometimes can be tricky. The mains are huge, which I like. Your components look awesome. Bad luck on the coffee. The substitution is better quality, agreed. Hot sauce on the main is good idea. I use it frequently.
