Many things from LN were cut, like Demiurge skinning humans to make magic scrolls and keeping them alive by feeding them soup made from his own limbs and then using magic to heal back the skin and limbs so he can repeat the process. indefinitely.

And while the anime doesn't say it directly, it does imply the process....
There's mentions of Demiurge's farm, using humans for scrolls, etc....
It talked about healing used in torture, but I don't know if it also talked about it being used in production of resources harvested from the living.... it might have...

"abelion sheeps" or "bipedal sheeps" Abelion is a region populated by humans and other human-like creatures.
In the anime he says that he is using their hide for scrolls, and also he needs someone to cook for the "sheeps" also is stated that Demiurge is reasearching ways to create hybrids with humans and monsters in a effort to make a better hide. So forcebreending and forced incest betwen beasts, humans and demi-humans.

As far as i can recall the only real reason he forcefed them their own limbs and then heal them was to see if they would starve or not after the healing(essentialy hes trying to figure out if the healing was producing new limbs or just making the eaten ones vanish from the stomach)

Ainz/Momon is not a warrior... he doesn't know any warrior skills or passives...
But he's so strong that he outmatches every warrior in this world (so far) with only his base stats as a magic caster...
Many of the people who were killed by Clementine have missing eyes...
Also remember that Kajit mentioned that she used to belong to the Slaine Theocracy's Black Scripture...
The guy who was summoning angels and fighting Gazef was from the White Scripture....

Oh don't worry, this show knows how to get gruesome. FYI, they even "toned it down a little bit" from the light novel (barely) mostly because you get to watch it instead of reading all the details and slowly picturing the situation in your head.
We need people to explain to them what is happening daily on demiurge happy farm
Just for them to know how dark overlord true story hidden in the anime can really be

Funny thing is Anime is trying to keep it family friendly compared to light novel. And I`m glad you guys try to pay attention to details, because you will be rewarded in this anime, since it really sets up events of even 3 seasons later in the third episode.

I for one recommend reading them, no question about it.
Edit: And yes, reading it after watching the anime will most likely STILL feel like a whole new story due to the sheer amount of stuff that got cut and the "way" the story is told when written =)
Overlord is kind of dark. *Laughs in season 2 & 3*
Overlord is an amazing story, the anime does have rough/bad CGI at times and it cuts out information from the novels but can still be a fun ride. I would watch a video of your thoughts on the light novels if you felt like reading them however, I don't want to take more time away from catching up on One Piece.

2 things that maybe i don't like about this series so far are, it has slower story pace from other similar animes i would say and the other thing is IT LACKS FRICKIN ACTION SCENES 💀
