Hey Adam. Do you mostly get local businesses as clients from your other YT channel? I'm already skilled in marketing, especially Google Ads, but not sure if I should work with local businesses or info product businesses. The problem with local is that I live in Europe and here small businesses don't have enough money to invest in marketing.
I don't love it unless you are super confident you can get results fast. You could start on a monthly retainer and then transition to a pay per performance model once you start getting results.

that would be a good idea when your starting out but it doesn't mean you can't move into other niches with more experience. Just think when you create everything for one niche you can just copy and paste for all other roofers and also gain experience of being good at a niche. Copy and paste your process to other niches in the future and you'll hit the ground running
It's not a really bad niche it's just very competitive. If you enjoy that niche and you can find a way to provide a a valuable service in a crowded market then go for it.
