I would say that aeroplanes/rocket boosters are more missed potential. Loops are only there for the show off, they make the track look more stylish while aeroplanes actually require to do something about movement and the overall structure of the track
Implementing those in the level design of a game like SRB2 is incredibly complicated and them being a "tradition" doesn't make them a smart or relevant choice given the fact that you could just jump through them, unless there'd be some kind of script to force you to take them like in modern Sonic titles. SRB2 just isn't the game for that.

I refuse to listen to "reason" when I've seen proof positive that it can be done. I don't care. It's possible, therefore I refuse to believe people will ever have a good excuse for excluding loops in the first place. Seeing these level remakes heavily truncated without loops and rails is pure uncanny valley vibes. I can excuse the lack of rails (despite those being a thing recently from what I've seen), but loops, a staple since Day One? Nuh-uh, brudduh. No siree, Bob. Mm-mmm.
