Hi Ann! I understand what you said in the beginning about the parchment paper and the shortbread sticking to the pan and it's almost impossible to get out. But, when the 'boss' does hers, the bottom of the shortbread has a really nice caramel color that sometimes has a slight crunch to it. That, combined with the soft chewiness of the lemon part is a 'ying/yang thing that makes the lemon bar taste so good! It is a PIA to get it out of the pan, but it is worth it! Mike
