  • These meat and cheese hand pies are the perfect on the go snack. To make these meat pies, Farideh fills handmade dough with cheddar cheese and blend of ground beef and pork cooked with tomato paste, Marmite, and red wine. The pies are shaped in a muffin tin and then baked, resulting in a golden crust and a savory, cheesy, and meat-filled center.

    I'm Australian, so I've eaten thousands of meat pies. The best pies I've ever had were in Queenstown, New Zealand. There is a famous burger place called Fergburger, but next door is a Fergbaker, and their pies were the best I've ever had. Fergburger were also the best burgers I've ever had. I think I might move to Queenstown.

    I've been to Australia a few times and I love the culture around savory pies there. Hopefully it catches on in North America.

      There's a few places doing it but they try too hard, make it fancy and stuff. The pie is a simple cheap thing and doesn't need to be so complex. If it's to catch on in America it needs to be the same as here in nz, cheap.

      @@101stsurvivor Agree. I've been to Scotland a few times, and even in places like Edinburgh there are cheap takeout (takeaway) savory pie shops there. Very cheap and hits the spot. I think they've been overly "gourmet-ized" here.

      I'm from Melbourne and we have many many great pie places. the best pies IMO are always simple steak and pepper pies with the generic pie crust, over in Tasmania the also make curried creamy scallop pies, those pies are also really good. Sometimes a little bit of stout can make steak pies even better but there's no need to go fancy as Dr milk says.

    The reason you want really cold butter is because when you knead it into the dough, the pockets of butter aren’t perfectly incorporated and make for a flakey dough. Or something

    To anyone who was curious about why the butter must be frozen, it is because when you're creating the dough, if the butter is room temperature, it'll naturally incorporate and you won't achieve the light type of dough you want. However, the main reason is because butter has water inside of it so once it's in the oven, inside of the dough, the butter will release steam which will puff the dough up creating individual layers, resulting in a lighter, flakier pastry, which is also how puff pastry gets its distinctive layers with so much butter.

      Frozen butter makes pockets of butter for the dough that helps with flakiness. Lamination helps with flakiness too

    Shredded cheese is covered in a potato starch to keep it from clumping in the packaging. This makes it hard to melt evenly. Always shred your own if you want it to melt well.

    Question - Do you prefer making the corn starch slurry for thickening? Or adding flour to your cooked beef, cooking it a minute, and then adding your stock to it?

    Cool concept, dough looks sturdy enough to hold all kinds of fillings quite well. Thinking pizza style sausage-moza-bell pepper-marinara sauce, Tex Mex bean beef chili filling, chicken-mushroom-thyme, or even a breakfast version with crispy bacon eggs and some fresh herbs

    Ponsonby Pies are the best commercially made pies in NZ usually found in the supermarkets or at Mobil gas stations. The bakeries in NZ are just home made pies and are not a the same

    Skip the grating step and cube the frozen butter then pulse it in the food processor with part of the flour at first then all of it.

    The cold butter seems like a trick? Why not just melt it and add it to the mix? Gonna get fridged anyway.

      She is making a shortcrust style pastry. Using cold butter makes it lighter and crisp as the water from the butter evaporates during cooking. You want to incorporate butter throughout the flour, rather than soak flour in butter.
      You can make hot water crust pastry, which uses melted fat, but that tends to be heavier and tougher, and is used for heavier fillings.
