Some of the rules and terms in this video are different from what you'll encounter in most descriptions of this game.
This game is called Demon in the United Kingdom, which evidence suggests is its original name and origin respectively. The name Canfield was given to it in North America after famous gambler Richard Canfield was said to have offered it in his casino in Saratoga Springs.
The draw deck in Canfield/Demon is normally called the stock, while the pile of 13 cards dealt at the beginning of a game is known as the reserve or the demon. The four piles of the layout in which you pack cards down in alternating colour collectively form the tableau, meanwhile, and the discard pile is known as the waste or wastepile.
Under most descriptions of Canfield/Demon, you _must_ fill empty tableau piles from the reserve until the reserve is empty, after which you can fill them at any time with the top card of the waste. That first restriction combined with the three-card deal makes winning uncommon: odds of 1 in 30 are typical. If you play by Richard Canfield's rules (assuming Morehead and Mott-Smith got their facts correct on the matter), you can only redeal the waste twice and lift an entire tableau pile for packing onto another, which of course makes winning _even less_ likely.
If you want to win more often than in normal Canfield/Demon, try its so-called Rainbow variant: redeal the waste only twice at most, but flip through the stock one card at a time. While limiting your redeals might hurt your odds, flipping through one at a time more than makes up for that, allowing you to win more often than not with good play.
