Black Bean Brownies // OIL FREE VEGAN RECIPE // WFPB

  • Black Bean Macadamia Brownies
    Makes 12-14 brownies
    2 cans black beans, salt free, drained and rinsed
    1 cup rolled oats
    6 tbsp cocoa powder
    1/2 cup brown sugar or coconut sugar
    1 tsp sea salt
    1 tsp baking powder
    2 tsp vanilla
    1/2 cup almond butter
    1/2 cup plant based milk
    1 cup chocolate chips or chunks
    1/2 cup macadamia nuts, chopped.
    Preheat oven to 350°F
    Add the black beans, cocoa powder, oats, sea salt, plant based milk, almond butter, vanilla, and baking powder to a food processor. Process until everything is well blended and somewhat smooth.
    Stir in the chocolate chips and the macadamia nuts.
    Pour into a greased baking pan, lined with parchment paper in the bottom.
    Sprinkle some more chocolate chips on top.
    Place in the oven for 18-20 minutes.
    Allow to cool completely before removing from the pan and cutting.

    Looks yummy. I don't use processed sugars, do you think I could use dates, bananas or another type of fruit sweetener? Thnx

      you could make a date purée by soaking some pitted dates and then blending them with water. probably about 3 dates and 1/4 cup of water to make 1/2 cup of date purée to sub for the 1/2 cup of brown sugar. let me know how it goes!

    Is the almond butter you use oil free?

    Can I use sweetener instead? I am insulin resistant so even brown butter is a no no. Also-what can I substitute macadamia nuts with? They are veeery difficult to find here

      You can leave out the macadamia nuts and substitute peanut butter or sunflower seed butter for the almond butter. You might be able to use pumpkin purée instead of the almond butter too.
