    Thanks for posting these great videos i am 16 and like all other sixteen year old boy I can't cook to save my life these recipes help a lot when I have to cook dinner.

    That looks good, but Inam surfing youtube for a jalepeno/bacon jam recipe that I can can. Im gonna hafta try this one though! Especially with the basalmic vinegar!

      jalapenos turn black then red if left longer before harvesting

    Great recipe! except always keep the seeds in, or it will just taste like capsicum and have very little heat.

    Cannot stress this enough, DO NOT ADD MORE SUGAR than the recipe calls for. Kind of obvious but it will cause it to caramelize and become tough and sticky we’re it’s almost inedible. Otherwise delicious and love it!!!!! Will make it again :)

    These red jalapenos are a mystery to me. I've never seen them in the mid-Atlantic coast. Any eastern folks know where to acquire such things?

      Technically they are their own variety named Fresno. A tad spicer than a jalapeño...generally. And no idea where to find them....but if you grow your own jalapeños, they will ripen to red on the plant.

    Heh, even just simmering balsamic can make my breath catch in my throat. Simmer jalapenos in it and it would indeed be unwise to inhale the vapors. Speaking of unwise, I did once rub my eye after cutting a bunch of jalapenos. The sensation was quite unlike what I expected; my eye of course streamed tears, but instead of fiery hot, it felt cold and numb. The tears were inconvenient, but it was not at all painful. Still, don't try this at home, kids. ;)

    No Pectin? Add less water and less cooking time..
