i believe that if we had our ingredients at room temperature like HidaMari does then there wouldn't be a need for fancy mixers. The only time a hand mixer is used is to whip up heavy cream, because whipping it by hand takes forever..

Your cheesecake may melt if it’s left out for more than 10 minutes after cooking so be careful. Keep it in your refrigerator at a cool -5 or 0 degrees Celcius. DO NOT PUT IT IN THE FREEZER.
