Great video! I'm going on holiday to Argentina from 17 March until 2 April: Buenos Aires, Ushuaia, and El Calafate. This will be my third visit to Argentina. However, my previous visits were a long time ago: mid 80's and early 90's. I am going to see if Argentina is a good country to retire to when I finally retire in '26. Besides the unstable currency, my greatest concern about Argentina is that I'm vegan. During my first visit to Argentina, I was a carnivore. On my second visit to Argentina in the early 90s, I was a vegetarian and did not find BA vegetarian-friendly at all. Hopefully, the vegan/vegetarian situation in BA at least has ameliorated in the last three decades.

It surely changed a lot. I am a vegeterian and I was there for the first time in ten years in 2021, and the veggie scene has exploded. From luxury dinning to street food, you will find plenty of options. Make sure to pay a visit to Gioia, a restaurant inside the Duhau Palace in Recoleta. Mindblowing!

Happy that you enjoyed your stay in Argentina. Like you said, we received immigration from all over the world with open arms. Just to give you an idea, my grandparents were Greek, Russian, Japanese and Spanish/Arabic. We received people from Spain, Italy, Poland, USA, UK, Russia, France, Germany, China, Taiwan, Japan, Greece, you name it.
Most of the people that came here from Poland, estabished in Misiones, which is located to the Northeast of Argentina, next to Brazil. You might have heard about Iguazu Waterfall. Also, it's where yerba mate (ilex paraguariensis) production is concentrated, as well as rice production. If you like fish, there are some delicious river fish there, like dorado (Salminus brasiliensis) and pacu (Myleus pacu).
Basically, between 1921 and 1976, 169,335 Poles permanently settled in the country. If I am not mistaken, we had three waves of immigrants from Poland. Today we have around 500,000 Argentines of Polish descent. My father travelled to Misiones (Obera, Azara, Apostoles, Junin, etc.) a lot because of his job and knew lots of people from Poland. He said they were very intelligent and kind people. Very talented and educated. Excellent Engineers. So much they founded a Polish Engineering Association. I believe the third wave brought people with higher academic training.
Sometimes, our civil registry would mispell surnames because they weren't used to them, so it is likely that some people are relatives, but their surnames are different.
If you are interested, here is a bit of the story and some notable people of Polish descent:
    en.wikipedia.org/wiki/Polish_Argentines
Also, there is a White Eagle Project which involves people from Poland here:
    www.elaguilablanca.com/elaguila/elaguila-proyec1.html
And there is a Polish Cultural Circle which explains the History of the community here:

I will visit that Cafe with the connection to Mendoza! I'm surprised that you didn't visit a steak house! Oh, Nuestra Parrilla has always been on top of my list. It has better choripan than the nearby SanTelmo market & cheaper, as you found out. Also I think the choripan here is better than the touristy Chori! By the way my favorite place for milaneses is Don Ignacio's. For steak, off the tourist track, is Las Tallas de Entr.
