Hey guys welcome back to Costa Rica. We have been here 3 years in march. moved here from Canada in our mid 50's. sold it all. We have so much plantain on our property. I was like you when i first moved here. No idea what to do with plantain lol. Now i have so many different dishes i make with it. You can actually eat plantain with out cooking it. You just need to let it go yellow. Tastes just like a banana just a little more starchy & with less sugar so more healthy for you ;) I make porridge, Lasagne, omelettes, soups, cakes, muffins and so much more. You are just a few hours from us, We too are in the Nicoya in the hills over looking Samara & Carrillo. Louis, The MOT IS Dekra here., It changed hands start of 2023. you got your marchamo yes? Looks like a nice little community. you joined. We bought land here and are currently busy trying to build and create our own food forest on our land here around our new rental casitas we built. How much longer are you in Costa Rica for? I see you are going to the Envision festival also. Not a popular event with many locals here. Because of the negative impact it has on the local wild life plus the garbage that gets left behind. So we don't support it. If you are ever in the Samara area, Give us a holla. LOVE THIS!! Louis, I know you are fan of less clothing, but seriously, as someone who lives in northern CA where the sun is brutual, please consider a UV protectant shirt. That way you don't always have to remember about sun cream, and a wide brimmed hat may also not be a bad idea. I love seeing how much Neo has grown! Can't wait to see your next adventure. It is so fun to watch Neo explore! Louis, you are so right about having to keep your eye on Neo every second! On the portion of the video when Raya was putting the Aloe on your back there were some wires hanging down on the desk area Neo was exploring. As I'm sure you know, that can be so dangerous. It's hard to keep up on everything for sure at this age. I had twins....oh my! That was alot of fun keeping them out of trouble. Loving these videos in Costa Rica!!

Omg those are super ripe plantains, you can cut then into slices and pan fry them or boil them and eat them like that they are sweet. You can also boil them and smash them and put oil and garlic ( like mash potatoes), you can also put cheese in them, you can make plantain soup as well and if they are green you can also make tostones or mariquitas 😋
Raya, I'm glad you realize the importance of taking care of yourself (physically, and mentally). It's not selfish. You can't offer your best self if you don't allow yourself to BE your best self, or at least try. I'm so excited for what living this new lifestyle is going to add to your lives. When the plantains are black like that you can boil them, then mash them with butter and a salty cheese.. soo good! You can also fried them or put them in the oven at like 375 for 15 minutes and then add butter and cheese 🤤
Enjoying your Jungle Diaries vlogs in Costa Rica. So cool to see the scorpian glow blue under the blue light. Exciting to see your land project develop. You should definately plant some cashew fruit. We have a few varieties on our property, the fruit is the best, we have red, orange and yellow fruits that come juicy ripe to eat and then keep the cashew to roast later.

I'm Malaysian southern Indian, and we use plantain too. cut them thin slice, marinate them with turmeric/ garam masala and some other spice and fry them until crispy. Serve with rice and curry is the best! Also, Oats can help with inflamed skin. Just plain oats mixed with cold water until it becomes a paste. One more natural remedy is rice water. Save the rice water from washing rice and use it to wash face or body with it, It can help soothe the skin and can use it to water plants too! But ngl ALOE VERA is one of the bestest natural remedy to alot of things.

for your sunburn! I make my own after sun with Lavender, coconut oil and Peppermint (I use the doterra brand). Lavender will sooth your skin and peppermint will cool that burn!! you could add these to your aloe too! feel better!

17:17 We bought land in a small town near San Mateo and our neighbor has a similar setup. He built a huge cover for his RV, an outdoor kitchen, a restroom area, and a swimming pool nearby. It looks great and is very functional. We can't wait to see your upcoming building projects.💚

Speaking of bananas when my niece was Neo's age she picked up a banana with the peel on and took a big bite and the look on her face was priceless my sister and me were in the floor laughing so hard lol, we had video cameras back then but of course we didn't record it though.
Plantain are great raw, especially black like that. A bit more chewy but so sweet and delicious. Take it from this Jamaican 🇯🇲- good cooked too and goes great in smoothies raw 😘🙏🏽

Raya/Louis: Plantains can replace, rice, potatoes, pasta, quinoa in any dish, so if you have a lot, swap it up for plantains. With plantains you can fry them, boil them, steam them, roast them. FRY: just as Raya did (when they are spotted brown or brown(best time to use them), any mold on them just compost it (don't use) ): or if you want to be quick slice them long ways like a strip of 'bacon' and fry them, or fry them like fish and chips (more oil), always have kitchen roll on your plate/bowl when frying to absorb the excess oil - BOIL: when slight brown/brown spots on skin, boil just for 10-12mins or less (depends how brown and soft they are), to check them: prick them like when boiling potatoes and checking potatoes, fork should go through (don't over boil or it will be like over boiled marsh potato and fall apart (when ready, add a little margarine or avocado and marsh it-up with fork or masher, like marsh potatoes, delicious yum! yum! - STEAM: (my fav): Top and tail them (like a carrot), leave skin on, put them in the steamer for 10-14mins (or less if they are more ripe) , if they are too long, cut them in half, when serving slice a little thicker than Raya when frying in vid (I like to have this with a veg stew poured on top - my goodness my mouth is watering lol, and ROAST(Bake): SAME AS STEAMER, but prick them first (like you would roast potatoes, no need to top and tail). P.S. Always wash Plantains first when you get them home (their outside skin), with a little cider vinegar or baking powder, stops insects/flies being interested and removes any bugs on skin, from the shop or market. P.P.S. if ever in doubt treat them like an English potato with half or quarter of the cooking time to what ever you do to potato, enjoy!!! :D love you guys like good cooked food :)

I love making tepache with my pineapple scraps. It's like a pineapple version of kombucha, but much easier and faster to make and, in my opinion, much tastier. Very fizzy and refreshing.
This place looks stunning! 🌴 I absolutely would not survive thee though with the heat (I'm a redhead used to UK climates haha) and those bugs - ain't no way you'd get me anywhere near that moth! 😂
It blows my minds that gringos live their lives without platanos, is the most delicious thing. You can cut them in little pieces and fry them and mix it up with everything, scrumbled eggs, rice, potatos ... but patacones and guacamoles and pico de gallo is the best of the best. Also you can cut them in longer but thin pieces and fry them and they are called "Tajadas de plátano maduro" in Colombia and they go perfectly with beans, rice and make a cazuela o bandeja paisa (veggie of course)
If you want to grow your own pineapples, you can cut the green stem part off and then plant it. I have planted many before but it does take 18-24 months to get a fruit. If you guys start planting every pineapple you eat on your property, you could be set in a few years 😊
The view there is amazing. I was going to ask the same thing about how the prices our there when it comes to food. Looking forward to seeing the bus when you guys finsh it. I remember when you bought the bus years ago Louis. Also little Neo is the cutest. Hes going to be walking soon.

I use a massive umbrella for the sun and then for the tropical unexpected downpour, can tie one to the pram.
Be careful of sun damage…especially overtime…and especially for baby Neo. ❤

For sunburn, mix equal parts water and vinegar to dab on affected areas. It really works best if you apply before bed (let it air dry).

get yourself sun umbrellas, or an uv reflective umbrella :) they are lifesavers in the tropics, even a normal white one helps a ton

If you want to grow your own pineapples, you can cut the green stem part off and then plant it. I have planted many before but it does take 18-24 months to get a fruit. If you guys start planting every pineapple you eat on your property, you could be set in a few years 😊
