Finding a way to get focused and calm in competitions seems like a basic skill they should include in training. The other sport anime that I’ve watched that has a little of the mental preparation for a match is a baseball anime called Ookikute Furikabutte, or Big Windup! The catcher and pitcher look like an alternative version of Hinata and Kageyama. I don’t remember if Daiya no Ace (Ace of Diamond) has this, but probably since the whole setting was a strong school really focused on developing talent. They had a really competitive string system.

I got surprised myself when i watched this last year Honestly another anime I had 0 expectation of but was insanely good was Hajime no Ippo, a boxing anime. Idk if they'll watch it tho its getting rather old (but gold)
Haikyuu is the perfect combination of sports and slice of life. The scenery of the show is beautiful and feels so nostalgic while the matches and competition is so entertaining and you never know what will happen next

The thing is while I agree with you guys a little about the star player angle in some team sports, volleyball as a sport is probably the most team focused out there. You cannot touch the ball twice in a row, you have to depend on your teammates to be able to do anything out in the court. If you have teammates who are not on your level in teams of play and communication you will not be able to shine out there.
