  • It's nearing the end of the 4th week of lockdown here in the UK, a situation made all the more frustrating by the incredibly glorious weather we're currently enjoying.
    Never mind. Join me onboard Aslan as I prepare and cook a perennial British favorite pudding, the naughtily named 'Spotted Dick' - traditionally served with custard, however as certain ingredients are proving impossible to source at the moment, I serve this dish up with some delicious single cream.
    Also in this video, I enjoy a couple of dark real ales, as well as say a thank you for a surprise gift from a couple of viewers.

    Found you on amazon prime during lockdown in the USA. Up to season 5, love the scenery and your sharing. My partner and I will be renting a canal boat to travel the Erie canal if not this Summer then next. Glad you are doing well.
    I was surprised to learn about all the canals.

      @@CountryHouseGent I live in Rome, NY where the Erie Canal originated. Lots of history here. I love walking the trail along the Erie Canal at various points as the views vary from place to place. You can find lots of vintage photos of the canal on the FB group "People and Places of Rome, NY". Each summer there is a group of bicyclists that ride the entire canal. I believe it takes 3 days. What an experience that would be to do! They stop overnight in Rome and camp out at Ft. Stanwix. Now with Covid going on I'm sure that has all been cancelled. BTW, if you use the smaller holes on your grater you won't get any pith on your citrus peel.The bigger holes are for grating and the smaller holes are for zesting. Your spotted dick looks delicious 😂 I saw a can of that in a supermarket once and got a good laugh. It was funny watching you choke on your spotted dick though, hahahaha!

    Spotted Dick is a steamed suet pudding containing dried fruit, and is thought to have originated in the middle of the 19th Century. The "spotted" part of the name refers to the currants, which resemble spots, and "Dick" is believed to derive from the word dough. BBC

    Salt brings out the sweetness. Another tip, use your steemer to make hard cooked eggs. place your eggs in the steamer basket and bring the water to a boil. Lower the eggs in and steam for 13 min. Then cool in water until they are cool enough to handle, store or peel. They cook perfectly and peel easily. Cheers

    The hops for your Hawks Head porter may have been grown in my back yard, so to speak. East side of the Cascade mountains, a big hop growing area. I think your pudding is uniquely British, have never seen anything like it stateside. Looks good!

    I have had a tin of SD on top of the kitchen cabinet for years !! It was there as a joke !! Well now I have to cook it and the instructions are precisely what you did !! Its even made in England and found it's way to Utah in the States ....Thanks for the fun !!

    Cheers Kev this video hit on a flood of many memories for me. My english mum making all sorts of steamed puds and old school meals. She was the kind of cook that could take a leg of lamb and feed 4 with 4 different dinners Roast Cold w/ salad Curried and Stew. Thanks for the trip down my memory lane Mate.
    Oh that Dick looked great... it was spot on

    As usual, a most engaging and educational video. Being as I live in Texas, I've never had the opportunity to eat any Spotted Dick (and have politely declined any of the unspotted variety ever offered). I must say that your approach to recipe demonstration reminds me of the late Graham Kerr, who hosted a daily cooking show during my long-lost childhood, except you are not belting down wine constantly (won't count the occasional pint).
    Have the authorities there banned all narrowboat traffic, even such as might be required in the course of routine maintenance? Do hope that whatever restrictions you are under are soon lifted. Looking forward to the next video.

      Cheers Larry. Sadly all non-essential boat travel is banned. Only travel allowed is to empty the loo and fill the water tank, both of which I can do here in the marina. 😔

      @@CountryHouseGent Not having any knowledge of narrowboat technical requirements (other than what I've learned by watching your videos), I would be tempted to think that just letting the boats sit moored in the water would not be good for them...again, though, I know very little -- the governor of my home state today announced publicy his plan to ease lockdown restrictions in incremental phases beginning this Friday, May 1 -- this state (Texas) has been one of the more lax both with restrictions and virus testing, so of course it's one of the first ones to ease limitations -- I'll be hopeful your authorities will revisit their earlier decisions soon and begin to let up on the restraints

There are a whole host of quaint, traditional dishes that are not done anymore but I think it's great to put your mark on them and remind people how great they are.     Still use your liver and onions recipe and turns out perfect every time. I’ve been eating a pot of liver as I’m on chemo and needed to up my iron intake. Looking forward to season 7 and more biking videos. Some awesome roads in the UK.

      Go for the big grater side, country house gent! Much bigger flavour and certainly much easier to use and wash than the ‘spiky’ side!🙂

    Thanks to The Great British Baking Show (as it’s titled in the USA), I’ve learned that salt is used to enhance flavors of the other ingredients. Also, in yeast recipes, the salt retards the activity of the yeast to allow a slower/proper rise. BTW, they made Spotted Dick on the GBBS. Cheers!
    On an entirely different note: we are having a tragic wildfire along the beautiful McKenzie River just east of Eugene, Oregon. Two small towns and rural properties have burned almost completely. The fire grew to 37,000 acres in 24 hours and is heading through other communities near to Eugene. We had unusually strong winds that downed power lines, sparking the blaze, and carried the fire at a rapid rate along the river corridor. I camp along the river several times each summer and it will be sad to see the destruction. I guess I’m sharing this because I’m feeling down and a bit anxious. So thanks, Kevin and anyone else reading my ramblings, for lending an ear and a prayer for the good folks and firefighters in Oregon. 🔥😥🙏💙

    We used to have a store here in the USA called "Fresh & Easy" owned by Tessco, they had a nice little UK foods section, my daughter stumbled across "Heinz Spotted Dick" and just got the greatest kick out of the name, and still does to this day. Maybe a better PC name for Spotted Dick might have been "Pimply Richard", but I have a feeling their sales might have tanked with that name.
    As a kid I remember my Mum making "Suet Pudding" or "Roly Poly Pudding" which we enjoyed with way too much Lyon's Golden Syrup.
    One other point, there is no substitute for real beef suet - PERIOD.

    I learned a few years ago to use a rasp for zesting citrus. It is much easier & quicker. Easier to clean, too. Just a thought for you.

    When I see you cook, I'm reminded of Ramsey.
    That would be Fred Ramsey, the washer up in our local Greasy Spoon.
    However, Fred Just uses the one bowl, as his scales have a zero function.

      My mother, from West Virginia, used to make mince meat pie with suet. It’s the waxy fat from around the beef’s organs. As you can imagine, it’s really good for you (not).

    Mum always made it in a small basin big enough for three and portioned it out for serving covered in whatever takes your fancy. I preferred Golden Syrup but custard is also good.

    it may be quite warm in UK, but cool and rainy here in Portland, Oregon. I also enjoy a porter or stout, had a boulder brewing co. - chocolate porter yesterday, may have another tonight. I'm not familiar with Guinness Porter i googled it and it mentioned a dublin porter and a west indies porter. I do prefer a hint of chocolate and not too much coffee profile. not too sweet either. What's your preference. always enjoy your videos. my hubby says : "hey why are we getting all these ads for buying a narrowboat? i just shrug my shoulders...could be we live vicariously through your adventures, cheers mate!

    My old mum used to peel a cooking apple then grate it in the mixture .
    And also we used to eat it with knob of butter and sprinkle with sugar .
    Yummy .

    Currants as we know them dried and in packets are "Raisins of Corinth", actual small raisins from small grapes. The other "currants" (black or red) are another fruit entirely. I think that they are related to gooseberries. I am reminded of a friend who was a retired electrician and now an avid gardener. His wife wanted some currant bushes so I suggested planting red, black red, black etc.

    Hilarious! :) I have never seen a cake made in a steamer before! I have made biscuits in a frying pan when camping though. Pretty cool! It did look very moist and yummy.

    Kevin, great to see you again. We have started using shelf stable box milk that can store for long periods of time and then needs to be refrigerated after opening. If you get the chance check it out as it may help you with having to hunt for milk. 4.9% beer, lol. What will you do with that?

    Made me laugh! It's difficult finding good Spotted Dick in the US. You mention it and we think you're talking about a venereal disease!!! I've had bad Spotted dick in the can...Its nothing I'd care to experience again. I never grew out of the potty humor innuendo stage of my childhood. I dont believe I'd care to!!! It keeps me going...I hope to try some real Spotted dick someday. Thanks for your instruction and humor!

    It's the "chocolate" malt they use in the brewing, not chocolate, obviously, but that's what they call it. It's just roasted a bit longer.

    It would seem that whipped cream would be more appropriate in keeping with the theme. One would assume that being stiff would make it easier to handle

    CHG. Love your videos. Couple tips. Tin foil should always be shiny side out. Second, zesting is done with the small holes in the grater. Not the side you used in this video for your lemon and orange. Thats for cheese and carrots! Your zest is too chunky as a rsult.

    I used to like the romantic thought and sides of living on the canal, peaceful tranquil life , but the more I watch canal life , the more I realise, it would shoot me into a deep depression, like a small floating prison , following a habit of filling water , emptying a toilet and stocking a fire 🔥,,m not for me cheers shane

    My wife I just watched all of Travels By Narrowboat on prime video.We are big fans now. I’m watching it again. Ha! I did watch Great Canal Journeys, but it’s no where near as good as yours. But the couple are cute. Lol!

    You wondered why a recipe calls for salt when it's a sweet dish. The answer is strange, but true. Salt enhances and compliments the sweet. It's one of the reasons there is such a thing as Salted Caramel.
    Oh, and I was going to suggest that you get a scale for measuring baking ingredients. I was going to send you a scale once I finished watching your video's to make sure you'd still be in Garstang, but now I don't have to. My late sister-in-law once said, "Cooking is an art while baking is a science." With cooking you can just bung ingredients in a pan, add whatever you want that sounds good without any real recipe, and Bob's your uncle. You can taste as you go to make sure it doesn't turn into slop. With baking you don't have the luxury of tasting as you go. You have to wait until it's all finished cooking and pray you didn't forget something or you didn't mistake the salt for the sugar. So one needs to be accurate with the measurements. Honestly, you've been very lucky with baking and what you've done before this hasn't turned out badly.
    I love to watch the British Bake-off and one time the contestants were supposed to make Rum Baba. They're small cakes, about 10cmin diameter, that are then soaked in rum and decorated before serving. The contestants had to bake the cakes in individual tins. They were to grease the inside of the tins then sprinkle the inside with sugar to give the Babas a bit of a crust. One contestant mistakenly used the salt instead of the sugar. As his cakes baked they absorbed the salt and, when it came to the tasting, one of the judges almost got physically ill because those Babas were too salty and inedible. So having a scale to measure your ingredients accurately is essential.
    Loving all of Travels by Narrowboat and I watched the seasons on Amazon and am now catching up with the episodes here on TH-cam. I was looking forward to the new season, but then... well... The Plague!! (dun, dun dun!!!) I hope you and Aslan stay well and are able to get out on the canals again soon. Cheers!!
