Here's what I think each of them can do in terms of fighting and overall capabilities.
Steven: Super Strength, Flight, Inventory Storage, has a staff that allows him to fire a powerful energy beam, the ability to craft anything or obtain anything in Minecraft(I think)
Sonic: Super Speed, Able to Curl up into a ball and launch himself at enemies or use it to go into tight spaces, Rings that can transport him to places or others, able to shoot out lightning blast or manipulate it.
Baldi: Super Intelligence, has a ruler that allows him to teleport, used as a boomerang, or just plain stick fighting skills, being able to travel through his math problem books, able to make numbers materialize and use as projectiles, barriers, and attacks.
Basically they are all awesome and capable of fighting and doing what they do best
