Salute/namaste from Texas. I make kadhi with regional recipes...Punjabi, Bengali, Gujarati. Marathi, Kannada, Telugu, Tamil, Malay, Odiya, Multani, Sindhi.
Your ingredients are pretty much what I use, except red mirchi...I use green masala instead. One thing I did not see in your recipe is Hing or Asasfetida. I add Hing just before i pour my Dahi-Besan mix. In Telugu recipe, I roast Guntur Byadagi peppers along with Mustard/Jeera which adds great flavor and color. The reason of stirring the Kadhi for at least 30-45 mins at low heat is to cook Besan, because Besan takes long time to cook and I have had Kadhi from other families who do a lousy job and finish making it in 15 mins...I could taste uncooked Besan...
In Kannada recipe, I use Karnataka Byadagi red peppers.
