    Way to go you guys! I've been cooking in a hearth since I was 12. I'm 62 now. I have a bit of experience under my belt lol. My mother, Nancy Carter Crump, wrote the book Hearthside Cooking.

    Awesome video..my Dutch oven is really old, probably close to 100 years old now. It doesn’t have a recessed lid to put coals on but I find, depending on what I am cooking in it…I can turn the lid upside down then I can put coals in it. I am going to so enjoy this series Pam and Jim. Thank you🇨🇦

    Oh my goodness ,a ton of memories came back to me while I watched this video. I was a Girl Scout ,back in the 70’s a first class scout was the highest honor one could achieve . To get that badge we had to demonstrate that we could survive,in primitive setting. Cooking with the Dutch ovens was a requirement.We would even stack them up from large to very small size depending on what we cooked for our meals. Any thing you could cooked in a regular oven could be fixed in a Dutch oven. And the ingredients were all from scratch.I dreaded the cleanup but I’m glad she taught us how to do it very similar to how you did yours. I became a Girl Scout leader, and I taught my girls how to use the Dutch oven. Thank you for rekindling such a fond memory for me. And it will come in handy for your viewers. Also it’s a lot of fun.

      Rachelle: Thanks for telling us about your times with the Girl Scouts and the fond memories you have of those years. That reminds me of the three years my second wife and I were Assistant Girl Scout for my daughter's troop in the late 1970s. That was also a time when Girl Scouts went door-to-door selling GS Cookies. At that time, GS cookies make-up 5% of the total annual cookie sales in the US. This 5% was during a six-week time frame each year. Jim

      I'm with you there. I can make perfect whap biscuits. I can make cakes pies and cookies with my eyes closed but can't make a decent biscuit to save my life. Lol. On the other hand I bet the NHL would love my recipe for hockey pucks. Lol

    My mother always took the last portion of the biscuit dough and made a turtle shaped biscuit for us children. As a mature adult, I still love it when my mother makes that tur turtle.

    When you talked about your biscuit journey I laughed out loud. That is me!!! I’m 52 and am still trying to find the right.Biscuit recipe…. Knead or not knead? Roll out or not roll our? Butter or lard??? The quest continues. Love your humble humor. I am a college instructor as well and have found that I am wanting to learn now more about preparedness and cooking skills. I’ve grown tired of academia and love your channel. You are a kindred spirit. Much love from Mississippi

    Great video - as always! I liked your clean up demo and appreciate so much how you conserved your water. As a long time camper, I usually use my biggest dirty cook pot as a dishpan, put biodegradable dish soap and warm water in it, wash plates, cutlery in the pot, then wash out the pot. Rinse with warm water, saving as much as possible to get the job done. Water is a precious resource, even here in the much rainier Mid Atlantic region.

    I just found, and made, the absolute best biscuits we've ever had over on Appalachia's Homestead. O. M. G. 2 ingredients. Seriously. White Lilly Unbleached self rising flour and heavy cream. Equal amounts, although I used a tiny bit less heavy cream. She just posted a video recently on tips for making biscuits, and they are incredible. I've made them 3 times this week, and it's just hubby and I, but we can't stop eating them! LOL

    Another great way to clean cast iron cookware is to wipe it out as best you can, then add a little vegetable oil and table salt. Rub it around with toweling and wipe out. Helps season the pan and removes baked on residue.

    I have watched this video numerous times and I have to tell you, I chuckle watching you clean the cast iron. My mother used to make us scour the cast iron with brillo! I don't scour my cast iron ever. Believe me, I can hear her fussing!

    I'm a day late watching this. I put a machine sewing needle through my finger. Missed my finger nail and bone, but .... I was distracted.

      @@RoseRedHomestead I was changing the lightbulb and I made a rookie mistake. I did not remove the needle first. Lesson learned. Whenever I am doing something other than sewing (or bobbin winding/replacing), the needle comes off of the machine! The darn thing went all the way through and stuck out the other side....

    This is one of your best videos!!! I loved it!! Especially the part of cooking with coals and your Dutch ovens as well as cleaning your cast iron. I forever keep wanting to use soap on my cast iron. I don't but then I end up having to use salt to try and scrub things off. I didn't know I should start out with shortening in the pan first. Loved how it all turned out. Thank you!

    I sometimes use course salt to clean my Dutch ovens then wipe it out.
    If it then needs re seasoning. I do the same as you did. Love all your videos.
    We have spent more of this Sunday watching them. Hygien was spot on.
    You are an excellent teacher, reminds me of talks by Sherry Dew. Clear, to the point and very informative. Thank you for the time you take researching the correct information. Joy

    This is precisely the kind of video I've been hunting for! It demonstrates how to make a simple meal out of storage items without using electricity. The cleanup was bonus! I learned so much.       Dish soap will not ruin a well seasoned cast iron pan if used on occasion. Just make sure you dry the pan over heat and coat it with oil while it's still hot.

    As you mentioned, Jim's instructions made distributing the coals easy; YOU make EVERYTHING look easy. It's funny when you say we will be back right after "thus and such" is complete. Most of the time, you let us know how much time it took for "thus and such" to take place. I so appreciate it when you do that. Now comes the funny part for me, UMMMmm it isn't as fast as yours.     I never realized how durable and long lasting cast iron pots are. I do have the enamel dutch ovens in 2 sizes. 4 quart and 7 quart. I love them and they are my go to pots for almost everything. I need to purchase additional pots and skillets. Thank you Pam for another awesome video.

      You are very welcome. I am not sure I want to use my enamel Dutch oven over charcoal, which is why I have the naked kind! I love them more each time I use them and they are so durable that I will be passing these on to my children and their children.

      @@RoseRedHomestead Pam, we just purchased the dutch oven with the legs. My sister told us to purchase a 3 gallon oil drain pan as our cooking table. (Our nephew is a boy scout and that's what they use) We bought the cast iron trivet for meat searing in the pot. Do you have a podcast on this? Thank you so much. 💓

    I think a rubber spatula could clean the beans up and put the extra tablespoon full in the fridge. Waste not want not? I’m Scottish! 🤣
    My real comment is 1) the biscuits and chili looked amazing! And 2) I’m always in awe of your strength. I have the same canisters and I have a hard time getting the lids on and off. You make lifting those cast iron pots look like child’s play!

    I love using beef tallow and leaf lard (pork) for shortening type oil for all pie crusts and biscuits. Really kicks up the flavor oh and frying French fries and tater tots in beef tallow is amazing! P.S. thank you for this demonstration!

    Self Rising Flour and you don’t need the baking powder and salt. I’m sure you know that but I didn’t until I watched Cooking with Brenda Gantt. Add a goose egg size clump of crisco and buttermilk. Gently swirl with hand and you have biscuits. Your meal looks so delicious!

    Hi Pam and Jim 👋. This was a really great video. Thank you so much for sharing it with us. I don't have any cast iron cookware but I'm sure I can find some old pans in my cupboard to cook with should we loose power. I'm really unprepared for such an event. It happens so rarely in my part of the UK, still you never know the minute, as my grandma used to say. God bless her!

      if your pots have plastic handles, they will melt. But look closely at the handles as some are attached with screws so you'll be able to take the handles off and use just the metal pot over a fire or coals

      They are wonderful to have and use--especially for when the power goes out, which it does regularly where we live.

    Loved this. That’s all we use when we camp is cast iron over coal or the fire. I’ve made cakes, roasts, pizza all in cast over the fire. Sometimes we cook in the backyard using our cast iron on our fire pit for a nice outdoor meal. Great videos you two!!

    My Mother has used a teaspoon of vinegar into the dry milk & water mixture or she has.made biscuits when the milk is about to sour. Then the two of us discovered plain yogurt also works in biscuits, Also, she has also cut down on lard, shortening or butter. by filling the measure cup with half the amount of shortening in water then empty the water once the butter or lard has made me water raise to the edge.

    In Central Louisiana, chili is normally eaten poured over rice and topped with raw white onions, shredded cheddar cheese and large dallopof sour cream and a large piece of buttered cornbread.
    But, I love chili with biscuits. It is very rare to find in here.

    My dutch ovens dont have legs and l just ordered little racks to set them on ,l love cast iron for charcoal cooking.

    I am glad you mentioned the Steramine again. I stopped and ordered a 6-Pack of them. That should be about all we would need in a lifetime. Nice to have for storage too. How many coals did you all use total? Do you remember? Those biscuits were beautiful and they baked so nicely in the Dutch Oven on stilts, as I call them. I don’t blame Jim for eating 4 biscuits. They are hard to resist, especially with honey on them. Does cornbread cook the same way? Thank you for that video. It is nice to see it done before having to do it!

    Such a good video. I am sure you have done a lot of things that others haven't thought of. We lived in a house without running water or power so we hauled water from a pump and I have a lot of skills for a grid down situation. I hated it as a kid but an thankful now!

    We have a little chain mail type of scrubbing cloth for our cast iron that we like. We also have some bamboo dish scrapers that are great for normal dishes as well as cast iron. Helps to save water potentially.

    Yum. I never thought of powdered milk for my food stores. Adding that to the list now. Very good presentation for minimal efforts in a grid down event.

      Yup. It’s good to have. Powdered milk, powdered buttermilk, powdered coconut cream, and powdered coconut milk are great for your storage. I think there’s powdered sour cream, which I need to get, and powdered butter. I have a lot of ghee, and other fats, but redundancies are good.

      Thank you. Yes, it is a "must have". We also freeze dry and then powder sour cream and yogurt. Other dairy products are commercially available as powder.

    Have you thought about making caramelized onion powder in the freeze dryer for French onion soup mix? Caramelized onions can be made in a crock pot in large amount over 6 hours.

    This was good to know. My husband and I are going to travel the United States in July and we will be doing primitive camping. We bought a portable camp stove/grill and we need to buy some pans. I'm thinking cast iron might be better and easier to clean than aluminum what do you think? I was wondering how we would wash the cookware. If you season it food won't stick and it seems easy. Thanks

    This was a wonderful demonstration! Thank you so much for showing us how to use the Dutch ovens. I have several and only use them occasionally, but really need to use them on a more consistent basis. One note: if you're off-grid, a kitchen disposal won't work, so food debris should really be dumped outside or buried (to keep animals out).

      That’s one thing we took out many, many years ago. We have a septic tank and don’t want to burden it with kitchen waste. And if it’s raw it goes into our compost

    I did not know how to care for my cast iron skillets until I saw this video. I learned a lot. I am curious as to how to prepare the coals and what kind of coals to buy. I have not had success using store-bought "charcoal briquettes" in my kettle-style bbq. If I do have to go off-grid, I would like to learn about how to prepare the charcoal.

    What a hoot!!! This was such a fun video---funny, too! Jim captured the perfect TA-DA!!! when you got those coals all just right. The way you looked, Pam, was exactly how we feel when we are able to pull off something you have taught us. It was just funny. And the biscuits---I'm sorry...but I'd have to make two pans of biscuits...forget the sharing--pan for you and a pan for me. Boy did they look good. Quick question..how did you decide what brand of cast iron to buy? Are there better brands than others? Jesus bless.

      If there is a Buc-cees (beaver store near you ) they carry cast iron products - found at Kroger’s as well.

    Oh I forgot to say Lodges has a charcoal chart that tells you exactly how many coals you would need for the temperature and various size Dutch oven that you’re using.
