In fact, in my opinion, caps are the superior option over corks - it's a stronger seal, and it lasts longer, and most caps have oxygen removing stuff on the underside of them - which is fantastic. We mostly use corks for one reason and one reason alone - presentability! They look nicer. But if you'd rather use caps, then go for it, it's probably better to use caps, anyway! Not too late at all! Thanks for joining the party! Star-san (which I think every mead maker uses) is a food safe sanitizer. (As long as you dilute it properly) so you can just sanitize and fill (yes there will be bubbles but once you start filling they just pop and go away) there is no need to rinse 😊 hope that helps! *Beau
JAOM is good to drink immediately! As soon as you bottle it, you can start drinking it! It gets better with age tho. It's good immediately, better at 6 months, and best after a year. Just make sure you don't bottle until the oranges sink and it clears. That takes two or three months. Sometimes more sometimes less.
We do bottle like that! Methinks you meant to say "I don't bottle like that" 😉. And that's fine. So long as you don't just pour it into the bottles, it'll be OK.

I made this recipe exactly as written - but I admit I put in a few extra raisins fro nutrients - it was delicious after 3 months.

Did you rinse the bottles after sanitization or just let the sanitizer sit/pour it out after it settled and put the mead in?

hi my oranges is still at the top of the bottle so i think it must of gone wrong ?
