ہم بالکل الگ طریقے سے بناتے ہیں پہلے کچے دودھ کی بالائی اگھٹے کرتے ہیں جب کافی زیادہ ہو جائے تو پھر مکھن/لسی بناتے ہیں مشین میں ڈال کر جب مکھن بن جاتا ہے تو پھر اس مکھن کو چولہے پر چڑھا کر پکاتے ہیں پہلے دس سے پندرہ منٹ اچھی طرح پکاتے ہیں تا کہ لسی بھاپ کی صورت میں نکل جائے ساری اور خالص پگھلا مکھن رہ جائے پھر اس میں اگر ایک کلو مکھن ہے تو پائو پسے ہوئے باجرہ کے دانے ڈال کر پکاتے ہں اور ساتھ ساتھ ہلاتے ہیں ایک سے دو گھنٹے میں سارا مکھن گھی میں بدل جاتا ہے جو کہ خالص ہے ۔۔۔۔ساتھ ہی ان پسے ہوئے دانوں کا اک حلوہ بھی بنتا ہے جو کہ ہم پنجابی میں ددے کہتے ہیں

My mom take 1kg cream & put mixser after some time cream changed into liquid pls tell me what she can do to convert this liquid into desi gee
Add less amount of water if cream did not turn into butter then add some ice cubes directly in and shake again in 30sec u will get the butter for sure...
You should add warm water if using direct cream, note I said warm not hot. The cream will convert to butter and then you can convert it into ghee. The jug used for purpose should not be filled above 70%. Good luck

We made ghee with same process but we add water (2,3 glass) after melting butter and then keep it in fridge. Ghee surfaces and harden as it cool down.
When the ghee is completely taken out on slow heat. Pour it in vessel through seive. Now the khoya is left, put it back in the same vessel add some sugar and milk, continuously stirring it after some time it take shape and lo, milk cake is ready

You can freez this light brown khoya in freezer keeping it in a plastic bag then use it in gur walay chawal aur zarda or in gajar ka halwa ...suji halwa ..loki halwa...many more

Eak Dam bakwas nobody can make desi ghee from l liter milk. We store milk top many days from several litre milk. We boil milk after cooling, should keep in fridge. In morning the milk top becomes a hard layer we take it out and store many top layers, when it is in more quantity, put on fire and slowly ghee starts coming out. Ido it and ghee is in kilos

So much wastage. The real trick is to make the ghee without wasting even an iota of the stuff. The best way is to whisk the cream directly, take the butter out and use the residual for cottage cheese and/or any recipe of a desert. Similarly, don't burn the residual while making ghee. Just warm it up and keep it in the refrigerator for 24 hours. Ghee will neatly freeze on the surface, leaving the curd in the base which can be again used in many recipes. Heat up the ghee again on the lowest flame while placing another heavy base on the burner under the saucepan. Ghee is ready with almost no waste at all. A note of warning!!! Stop trying beating women in a job which they know best😇
