Italian Wedding Soup

My grandmother called it "scuddol" soup, and my mom called it "holiday soup". Italian wedding soup is not served at Italian Weddings. Minestra Maritata is the perfect marriage between meat and greens. In our family, we had escarole (scuddol) and mini meatballs in chicken broth. This was a special dish that we only had on holidays. I never remember having it at any other time of the year. But as far as I'm concerned, you can have it anytime. Easy weeknight meal. Add pasta or croutons (bread cubes dipped in egg and deep fried) to make a more substantial meal with a salad. It's delicious, healthy, and just a few simple ingredients.
