If you are wearing headphones you can always hear it more loudly through the speaker corresponding to the churches direction. When you come back later in the game the chanting is gone and corpses wearing clergy or cult-like robes can found. In other words, you are hearing the actual choir. Stop and think, what other areas in soulsborne games have a soundtrack besides bosses?
You forgot to mention that while underground, this chant sounds muffled and distant, but when you exit it on the open street, it becomes clearer and louder, and it also affected by reverberation effects where they are present. So yes, it essentially is an ambient sound rather than soundtrack.
Micolash and the School of Mensis are probably the closest thing Bloodborne has to a true "antagonist". Their single minded obsession to commune with the Great Ones leading to the Mensis Ritual thus pulling the Lecture Hall into the Nightmare realm, and if allowed to continue, perhaps the entire world.
I think that this theory holds water. What I feel is that right from the start, the world we are in is somewhere on the scale between reality and *spoilers* Great Ones' Dreams which are, due to their cosmic power, no less real than the regular reality. And then we can only go deeper and deeper, further from reality and further into dream. The only 100% non-dream locations would then be at the very start, as you get a transfusion and at the end when you wake up.
I love how this music can either be strangely calming or utterly terrifying depending on the context. As I listen to it now, it gives me a strange sense of comfort, but it made me feel completely out of my depth while wandering through Yahar'gul.

This is the place that made me wish souls games had more places with music. Not all the time, don't get me wrong, but just a little more. Like every 30 minutes you encounter a place with deeply atmospheric music or so.

You can play it on PS5 tho, Sony put it in their greatest hits list, so if you have a PS Plus subscription you can get Bloodborne and many others for no additional cost. HOWEVER, people said that Bloodborne plays no different than on the PS4, even with that PS5 SSD. That was the one thing expected to be better, but it's still capped at 30 fps and 720, while other PS4 games do enjoy the SSD advantages. There's a youtuber by the name of Lance Mcdonald that made an unnoficial patch so Bloodborne hits 60 fps and 4k on PS5, you just need to know how to mod the console. He made a video about it some months ago if you check this channel. TL;DR Bloodborne is in both consoles, but runs no different unless you patch a PS5 on the side, and there's no official remaster on sight Also, PS5 scalpers out there, be careful if you go for that one
