This fish is the infamous northern snakehead fish, an invasive species in the United States. Hopefully this recipe will help control the invasive fish population in the USA
How did it get there in the first place? I don’t think any of that particular fish could leave Chinese kitchen alive. Did someone tried to keep it as a pet, and flew it all the way across the pacific???
@@franksun4017 There could be quite a few different reasons. A common reason for such invasion is that the fish somehow got into the water tank of a large ship, and got poured into the water when the ship reached the U.S.
@@franksun4017 A lot of invasive species either happened by accident, or were intentionally introduced before we humans had the intelligence to realize that adding non-native animals to an ecosystem is actually very bad for it. There's so many unfortunate cases where white european colonizers released animals native to other countries because they thought it would be nice to have a population to hunt or fish from, without realizing the destruction it would cause.

It is a stainless cleaver.Most Chinese professional chef never care the brand of cleaver. Sharpening is much more important.

中国常规饭店里的厨师一般都用夹钢刀,锰钢刀,淬火煅打,大约20-30人民币,基本没人用不锈钢的。

Brand doesn't matter, use Ikea cleaver and it's sharpener, sharpen it every time before cooking, it will be as sharp as any top brand.

你可以把花椒洒在鱼汤上面,然后把油直接泼到鱼汤上,周围用纸板或者毛巾挡一下

其实这样做出来,没有藤椒鱼那么麻,也没有水煮鱼那么辣,突出一个鲜香。花椒和辣椒看着多,其实只是提味用(算得上是川菜精髓吧)。当然这和广东的鲜香是截然不同的。
麻辣麻辣就是缺一不可,看你是能接受麻多些还是辣多些自行调节
