2 medium eggplants
Water and salt

Olive oil
Sweet paprika 7g
Salt and pepper
Garlic powder
🔹
Dried tomatoes in oil (70g)
Mozzarella for pizza 200g
100g tomato puree (salt + pepper + olive oil)
Parmesan 40g
Basil leaves
1 Cooking: Bake the aubergines at 180 ° C (460 ° F) for 20 minutes
2 Cooking: Bake for another 15 minutes

Second time baking this, absolutely delicious flavour and texture, a new fave, we will be eating regularly. I steam the slices for 10 mins in a big griddle pan instead of soaking in salty water. Works really well to ensure the aubergine slices are cooked nicely. In UK sometimes they can be a bit tough, so steam then bake makes them soft and creamy. Thanks for sharing this recipe.
