A Very Tracker New Years Eve Celebration! | Lemon Pig, Noodles, Grape Wishes & More Fun!

- In today's vlog we celebrate New Year's Eve at home! We started the day by putting the extender track on Jackson's roller coaster that he got for Christmas, he was unsure at first but he warmed up to it pretty quickly and he loves it! Then we show you what Tim got for Christmas! Then it's time to get our NYE traditions going! We start with the lemon pig and Jackson got to help us with it this year, he had a lot of fun! We crack our eggs in cups and set them aside so we can check on them and interpret them in the morning. We have our mini NYE celebration with Jackson before he goes to bed and he loved the confetti and party hats! Then after he went to bed we made our dinner, a garlic noodles recipe we found on instagram, it was really good and pretty quick and easy! Then we ended our NYE celebration with our 12 grapes tradition! We continued in the morning with our eggs in the cups, what did you think, did you see what we saw? Garlic noodles recipe from (@fitgreenmind)
RECIPE (2 servings each 620cal/30P/85C/15F):
-200g tofu
-1 Tbsp soy sauce
cook in oil, add soy sauce
-1 onion
-2 scallions
-1 to 2 bell peppers (we used mushroom)
sauté until softened
Sauce:
-2 Tbsp soy sauce
-2 Tbsp hoisin sauce
-1 Tbsp each maple syrup, vinegar, optionally mirin
-2 cloves garlic (or more)
add all ingredients together and cook until thoroughly mixed & serve.

Happy New Year!! I felt the same way with my son who is a few months older than Jackson (August) about being around kids his age since he is our only child right now, we actually found a really small pre-school near us and signed him up 3 days a week and it was the BEST decision we could have made! Our son absolutely loves it and the growth we have seen in just the 4 months he has been going has been incredible! I was worried about covid but I must say they take every precaution they can and we have had no incidents of exposure. The class sizes are small only 6-8 kids in my sons class and he goes only a half day from 9-2! I also made sure NOT to sign him up for just a daycare ( I can watch him myself ) but I made sure the school actually had a Curriculum! My son gets his time with his friends and I get some time to do things I need to that are just alittle easier without him! I think Jackson would absolutely flourish and honestly help kids his own age as he seems to be very advanced already! Just a thought, it took me awhile to be on bored with school with everything going on in the world but I would highly suggest it now!

To us Jacksons looked like a rollercoaster, Tim's at one point looked like Spiderman's eyes and face. and, on one point on Jenn's , when Tim said, do you see that, we saw an ultra sound photo shape with a baby.
