If I do get a second dog, Ember will be over 6 months old and will have had some training to be ready for a new sister. I also help board my friend's golden who is nearly 2 yrs old and they get along just fine. So I believe Ember will do well with a new puppy as the "big sister."
From a viewers selfish perspective, it was enjoyable watching your videos with Sarah and Katy. You were a great team and great company for each other. However as you have said, raising puppies can be hard work, so at the end of the day you have to have the final say on the decision.
I am boarding Pike's Lab/Golden mix for about two weeks currently in my kennel. Ember is doing fine with Kodi and holding her own even mowing down Kodi who outweighs her by about 30 pounds!
I would not recommend two puppies for the average person. However you seem to be a skilled dog trainer. You have the stuff, you have the room...and I see you have the name. Go for it, you are going to do it anyway.
I HAVE Already done this before. I got Sara and Katie my last two dogs (a Border Collie and Irish Setter) together at 10 weeks old and raised and trained them together. They were with me for just over 15 yrs. This would be a little different only because I am 15 yrs older now. LOL. I have had dogs all my life since I was 3 yrs old!
I think you should get another border Collie to have a playmate and friend for ember. She will be a great big sister ever. Just like Katie and Sarah were Ember will be there to teach the new sister to be with you.
I would wait. Give time with Ember and her training.

Yes, it was nice havi8ng two dogs. It really balanced things out.
I vote yes. Enjoy life.
Now I have to decide the coat color I want in my next border collie.

I agree. I just want Ember to be a bit older and have more training before the new puppy does show up!
