Lovely video! :) I still think you're eating it the wrong way, though (even if I'm fully aware it's not for everyone). You’re supposed to cut the herring into small pieces (since it's so incredibly salty) and spread it over the sandwich, along with onion and boiled potatoes. It's also much tastier with crispbread (hard flatbread, not the soft flatbread you're eating it with).
Just dont forget a thick layer of butter on the bread! And the use of not filet ones. Better to filet on the plate and use the "rom" fish eggs on the bread. I just had a pizza and turning hungry! I only have 6 big cans of surströmming in my fridge. One is from last year.
That was brave. I always chop up the surströmming in tiny pieces to make it easier to bite through. It also makes it easier to vary the surströmming dose. Lastly, I need a really strongly flavored schnaps.
DAAMN. As a Swede I'm shocked at how big of a piece you tried on your first time. I would have felt sick personally. Just like the waiter said, you can eat it however you want, but for someone that has never tried it, you put more fish than most Swedes do 😁 Most people that are new can easily go for 1/4th or 1/5th of a filet in 1 tunnbröd and still feel a strong taste of surströmming 😂

It is an aquired taste for sure, make sure to eat it with people that like it and after a couple of times you will like it too. I usually do not put that much fish in each bite, I use it more like a seasoning. Nowadays the smell actually makes me hungry, and the initial smell only lasts for a while, you get used to it. I'd argue that Kallax is the best for beginners, there are stronger ones like Röda Ulven that even I find tasting a bit too strong. Oh, and get rid of the fin on the back before eating. Only get filets, the whole fish is difficult for beginners as you need to gut and rinse it.

This was a great video. I'm that weird person that have never had a bad reaction to surströmming. Maybe because I grew up eating it and no one in my surrpundings had weird reactions. The only thing I remember was my mother compaining that the smell attached itsef to the curtains.
Your description of the taste reminds me of a conversation a coworker and I had once about red bell peppers. I was telling him how much I like bell peppers, especially the green and yellow, but how the red were just so strong. He responded with the best description, "if there is a red bell pepper in the room, you can taste it." That is like your description that it was like salt, and there was fish nearby.

Honestly, surströmming is only eaten by a small part of the population. Now you got the good, normal stuff left to try, you have several delicious dishes made with the same species of fish, but unfermented in the Stockholm area and alot of pickled varieties from the westcoast. You have 2 types crayfish, one is a couple of different kinds of sweet water crayfish and (the correct) one with ocean crayfish (Nephrops Norvegicus). And, if you win a huge cash price or inherit a large sum - Lobster from the west coast. Praised by tourists for hundreds of years, but i say our prawns are better (So be sure to try them to). Then - if you eat meat, of course game. We have moose, boar, venison, deer, hare, pheasant, etc etc. Venison and moose are personal favourites. Start your journey with those few items, but there are many more.

You are very brave!!! I visited Sweden nearly 30 years ago and I wanted to buy a can of this fermented herring for my Dad who loved herring. But, my Swedish friend told me that I wouldn’t be able to bring this with me in the plane. And, if I successfully snuck a can with me into the plane and the can would ooze or break open during the flight, my Swedish friend told me that I would be in serious trouble with the airline because the plane would be forced to land because of the smell. I took his advice and did not buy it.
As a Swede, I have to say you and Cecilia are champs!🙂. I, my self can't stand the smell of surströmming. It truly is a mix of death and sewer!😑. And I have to say you did your try of it honorable and well thought out. Another Swedish fish(pun not intended... or is it...;) to try out, as it is seasonal in Jul, is Lutfisk. Can't stand that either, but that one you can try at home as it's a fish dried in lye, and all you have to do is to saturate it in water. It to, is heavily dependent on its condiments🤔. As someone who's only had surströmming twice and thought it was OK i must say you were doing a great job and heading in the right direction, the way to eat it (at least as we did it) is to hide the taste of the fish with all the accessories, I definitely wouldn't be putting an entire filé in as you did but rather be cutting it up into smaller pieces and putting them in there. Tasted a bit licoricey (a taste which most foreigners hate :)), the aftertaste was still horrible though :)

When I first tasted surströmming I was eight or nine years old. My mum made a sandwich with a lot of potatoes and like a quarter of a fish, spread out as seasoning. I’ve loved it ever since. I remember how I felt about the smell before, but since that first time I kind of like the smell as well.
My parents had a surströmmingsparty every second year, with their friends. A bunch of big cans, and if I was at the neighbors' (>200meters away) and the wind was light, I could smell it and would not go back home. My dad would eat >10 herrings, basically finish whatever was left. Still strong bad memories from my younger years, when I couldn't flee the home. I would call it child abuse, and I have never tried.
A friend of mine, who tried it for the first time, said it smells like piss from a cat robot. Wich I think was very clever. It smells like fish, of course, but there is some kind of gasoline bouquet to it. I personally LOVE Surströmming. But...I grew up with it. I totally understand grown ups who hates it. 😆

Only eaten it once, found it tasted ok when I ate it with just boiled potatoes and ignored the rest of the toppings. It tasted ok but not good enough for me to try it a second time. 😂 Suggestion what you have to do to get a true "Swedish" experience: go on a trip (weekend or more) up North, into the polar circle and see Sami culture up close, either during summer when the sun never sets or during winter when it's night 24/7 and see the Northern Lights. Or also, take a ferrycruise from Stockholm to Helsinki or Tallinn and see those cities.

I'm from southern Sweden (my whole family is from Blekinge, like I'm so mono-heritage that it's boring) and I've never tried surströmming either because it's not part of my native culture. So it's not a universally Swedish thing and now I guess you're more cultured than I am! xD And I don't want to try it, honestly. I very much do not like salty nor sour food, and I _have_ puked from smells before in my life. Doesn't help that I do not like the texture of boiled potatoes or raw onions either. Also, I have tried a Norwegian fermented fish before, rakfisk. It's made in a very similar way but from other species of fish and with slightly less salt. Didn't hate it, but wouldn't come back for seconds... So even though I love herring both pickled and fresh-fried, this is not for me.
You take the file’t and cut it in small peaces. Cut the potatoe in small pieces and mix. Put some on tunnbröd then garlic and gräddfil then a roll and eat. Surströmming is fermented because of the closed container othevise it’s the same process as Gravad lax.

I have been at an open can of surströmming 3 times. First time it actually did taste good. If you like djungelvrål, I think you would enjoy surströmming. The other two times, even with knowing how it tastes, I couldn't get i passed my nose. The smell. Other things to do in sweden. What about the ice hotel in Jukkasjärvi? I think it opens for the season soon. Soon as in december.

Eat smelly fish with a true veteran, a person that did this many times before, and you can tell him/her your preferences, and they will create a really tasty dish for you. Never take a whole piece of sour strömming if you are a beginner. Cut it into small pieces and start by placing a few pieces on the bread together with potatoes, onions, tomatoes, etc. Then you can add more and more until you find "your" balance.
With winter coming, correct me please if I am wrong, but doesn’t Sweden have an ice hotel somewhere in the winter. If so I think that would be an amazing video. But regardless if there is one or not please keep the wholesome videos coming
I'm Swedish and still haven't had it but i'm sure i would love it i'm usually into weird stuff like that. But the small tho, some students in highschool opened a can in the ventilation shaft so we had so evacuate and school was cancelled those days.
Meagan! I don´t think that anyone can "learn" to enjoy fermented herring "surströmming" as a grown up. It's like coming to Iceland, and they offer you surhaj, fermented shark, thats even worse To like it, I think you must have been grown up with this whole thing. Getting to like it as a grown up, just doesn't work, so skip it, there is so many Swedish dishes that one likes spontaneously, like gravlax, köttbullar, Stekt strömming on rye crisp bread, kalops, (like boeuf bourguignon the Swedish way, but not as many ingredients, but just as delicious
I would like to commend you for actually trying it properly and not just as a stupid challenge. I find those videos disrespectful and offensive. I would also say that that is a lot of surströmming on your first bite. Usually people who actually like surströmming just sprinkle some bits on their surströmmingsmacka. A straight up full intact fillet is definitely hardcore. I have to try that next time ;-) I love the stuff but I absolutely do not expect others to like it. But as long as people give it an honest chance and don't disrespect it with stupid youtube challenges that's great. The fermentation actually just takes around 5-7 weeks. The main idea is to keep the salt level of the brine high enough that harmful bacteria can't compete with the good fermenting bacteria but not high enough that the fermenting bacteria can't survive. That way as long as it's fermenting it doesn't go bad. The bacteria do the same thing as they do with sourcream, yoghurt or pickles (real pickles not just cucumbers in brine). But it will of course get more and more fermented and eventually turn into a soup. Especially if you don't keep it refrigerated. A mistake I see a lot of youtubers do. They see a can and think it can be stored in room temperature but it needs to be kept refrigerated. If kept in the fridge it keeps for years. Last years cans are usually the best actually. Also it does NOT smell like shit. It's a very strong smell and I can understand that a lot of people might think it's disgusting but it's definitely NOT the same smell as shit.
They were kind of nice by having it opened and rinsed for you guys. If you open a fresh can yourself, the smell hits you like a punch from Mike Tyson lol
I'm by no means an expert (being from Uppland and not really liking surströmming, although I can eat it)... but as far as I know, you normally eat it outdoors if you can. Now, I understand why the restaurant can't do that, spreading that smell in the neighborhood in a city wouldn't be popular, especially where it's not "culturally accepted". (Surströmming is more a thing in northern Sweden, not so common in the southern half.)
im 50 and everytime my parents have had this ive been at the Pizzeria, its not for everyone, not even swedes ;) but from what i know you should have more topping and less fish ;)
Im swedish and I havent eaten it. I guess its most common in the north. Only time ive encountered the smell of it was when me and my buddies in 8th grade opened a can and hid it in school, the school had to shut down for 2 days thats how bad the smell was.
I am swedish and i have never had surströmming and i dont know of any of my relatives have had it either (we live in the southeast of Sweden close to Öland so its probably why we havent).
That was a weird way to serve it at the restaurant, they are suppose to empty the surströmming container of the liquid away from the table, the smell will not be as strong then. And the "there no wrong way to do it" is a bit weird if you don't know any way to do it. They should have recommended you to cut it up into smaller pieces and add what toppings and some potato to dilute the taste, less is more at the beginning. But good try anyway without any help from the restaurant, hope you try it again, maybe with someone experienced that can help if possible, and eat it outside :)

The smell sits mostly in the mostude, so deep frying it would probobly get rid of basically all the smell, i don´t know what it would do to the taste.

Only eaten it once, found it tasted ok when I ate it with just boiled potatoes and ignored the rest of the toppings. It tasted ok but not good enough for me to try it a second time. 😂 Suggestion what you have to do to get a true "Swedish" experience: go on a trip (weekend or more) up North, into the polar circle and see Sami culture up close, either during summer when the sun never sets or during winter when it's night 24/7 and see the Northern Lights. Or also, take a ferrycruise from Stockholm to Helsinki or Tallinn and see those cities.

I'm from southern Sweden (my whole family is from Blekinge, like I'm so mono-heritage that it's boring) and I've never tried surströmming either because it's not part of my native culture. So it's not a universally Swedish thing and now I guess you're more cultured than I am! xD
And I don't want to try it, honestly. I very much do not like salty nor sour food, and I _have_ puked from smells before in my life. Doesn't help that I do not like the texture of boiled potatoes or raw onions either. Also, I have tried a Norwegian fermented fish before, rakfisk. It's made in a very similar way but from other species of fish and with slightly less salt. Didn't hate it, but wouldn't come back for seconds...
So even though I love herring both pickled and fresh-fried, this is not for me.
You take the file’t and cut it in small peaces. Cut the potatoe in small pieces and mix.

Surströmming is fermented because of the closed container othevise it’s the same process as Gravad lax.

I have been at an open can of surströmming 3 times. First time it actually did taste good. If you like djungelvrål, I think you would enjoy surströmming.
The other two times, even with knowing how it tastes, I couldn't get i passed my nose. The smell.
Other things to do in sweden. What about the ice hotel in Jukkasjärvi? I think it opens for the season soon. Soon as in december.

Eat smelly fish with a true veteran, a person that did this many times before, and you can tell him/her your preferences, and they will create a really tasty dish for you. Gives you the right tool if, for instance, this is a annual thing. Like the lobster premiere, last open bar in Sälen for the season or trädgårdsmässan in Gothenburg. Nes pa?

Never take a whole piece of sour strömming if you are a beginner. Cut it into small pieces and start by placing a few pieces on the bread together with potatoes, onions, tomatoes, etc. Then you can add more and more until you find "your" balance.
I was born in Sweden 37 years ago and I've never tried surströmming, and I never will :D

I'm Swedish and still haven't had it but i'm sure i would love it i'm usually into weird stuff like that. But the small tho, some students in highschool opened a can in the ventilation shaft so we had so evacuate and school was cancelled those days.

Meagan! I don´t think that anyone can "learn" to enjoy fermented herring "surströmming" as a grown up. It's like coming to Iceland, and they offer you surhaj, fermented shark, thats even worse To like it, I think you must have been grown up with this whole thing. Getting to like it as a grown up, just doesn't work, so skip it, there is so many Swedish dishes that one likes spontaneously, like gravlax, köttbullar, Stekt strömming on rye crisp bread, kalops, (like boeuf bourguignon the Swedish way, but not as many ingredients, but just as delicious

I would like to commend you for actually trying it properly and not just as a stupid challenge. I find those videos disrespectful and offensive. I would also say that that is a lot of surströmming on your first bite. Usually people who actually like surströmming just sprinkle some bits on their surströmmingsmacka. A straight up full intact fillet is definitely hardcore. I have to try that next time ;-)
I love the stuff but I absolutely do not expect others to like it. But as long as people give it an honest chance and don't disrespect it with stupid youtube challenges that's great.
The fermentation actually just takes around 5-7 weeks.
The main idea is to keep the salt level of the brine high enough that harmful bacteria can't compete with the good fermenting bacteria but not high enough that the fermenting bacteria can't survive. That way as long as it's fermenting it doesn't go bad. The bacteria do the same thing as they do with sourcream, yoghurt or pickles (real pickles not just cucumbers in brine). But it will of course get more and more fermented and eventually turn into a soup. Especially if you don't keep it refrigerated. A mistake I see a lot of youtubers do. They see a can and think it can be stored in room temperature but it needs to be kept refrigerated. If kept in the fridge it keeps for years. Last years cans are usually the best actually.
Also it does NOT smell like shit. It's a very strong smell and I can understand that a lot of people might think it's disgusting but it's definitely NOT the same smell as shit.
Raw herring from the Netherlands will also be a challenge for you, but I think you will love it much much more :)

I'm by no means an expert (being from Uppland and not really liking surströmming, although I can eat it)... but as far as I know, you normally eat it outdoors if you can. Now, I understand why the restaurant can't do that, spreading that smell in the neighborhood in a city wouldn't be popular, especially where it's not "culturally accepted". (Surströmming is more a thing in northern Sweden, not so common in the southern half.)
If you open the can in a bucket of water the water will absorb the stench. The fish will then just be salty but not smelly

im 50 and everytime my parents have had this ive been at the Pizzeria, its not for everyone, not even swedes ;) but from what i know you should have more topping and less fish ;)

Im swedish and I havent eaten it. I guess its most common in the north. Only time ive encountered the smell of it was when me and my buddies in 8th grade opened a can and hid it in school, the school had to shut down for 2 days thats how bad the smell was.
"sur" can also mean "out of date/expired" in some context. ""mjölken var sur" - The milk was expired"

Tip: Remove skin fron the meat and put small pieces of them on the tunnbröd. BTW hard tunnbröd is better ;)
I am swedish and i have never had surströmming and i dont know of any of my relatives have had it either (we live in the southeast of Sweden close to Öland so its probably why we havent).

You gotta fillet that thing first! Your'e not suppose to eat the skin and fins. :) Then you will defo get some bad textures.
That was a weird way to serve it at the restaurant, they are suppose to empty the surströmming container of the liquid away from the table, the smell will not be as strong then.
And the "there no wrong way to do it" is a bit weird if you don't know any way to do it.
They should have recommended you to cut it up into smaller pieces and add what toppings and some potato to dilute the taste, less is more at the beginning.
But good try anyway without any help from the restaurant, hope you try it again, maybe with someone experienced that can help if possible, and eat it outside :)
