    You are my favorite cooking channel for grains! I can hardly wait for my 25 pounds einkorn berries to arrive next month on subscribe and save Amazon.
    Your bread recipe came out AMAZING so I know I can trust your recipes. My husband loves chocolate chip cookies and peanut butter cookies the most so this recipe will go into my new ''grains recipe box'' I'm starting. It will be filled with all of your recipes.

    I followed your link to the bosch compact and ordered it before Christmas. I have an Ankarshrum mixer that is amazing, and I have to say I'm very impressed with the bosch compact mixer. I ordered the stainless steel bowl today. The only problem I had with the compact mixer is that the attachments hit the bowl when raising or lowering them. I finally found a video that said the reason for the "Park" setting was to place the head in the correct position to remove the beaters/ dough hook. So once I held it on "park" long enough, it moved the head to the correct placement to raise and lower the beaters. I'm really enjoying the mixer and your sourdough recipes.

      @GrainsInSmallPlaces I didn't know it's discontinued. I may pick up the refurbished one for $99 as a backup..... I did find your review video this afternoon that explained the park feature. I'm looking forward to a video on making sourdough bread in your mixer.

      That's a great deal! I typically don't use a mixer to make sourdough bread, I do the stretch and fold. but I have made sandwich bread with added sourdough in my mixer!

      @GrainsinSmallPlaces I used to make my sourdough bread with stretches & folds. I found a recipe using a sponge and soaker that I replaced the yeast with sourdough, and it works great in the Bosch Compact. I'm so glad I came across your videos. You bake so much like I do, I hope I don't bug you too much with all of my questions. Do you find a lot of difference in your sourdough baking in the many places you travel? I'm in northwest Texas, and I found that I have much better results when I visit my daughter in Northwest Arkansas and bake there.

      I usually do the stretch and fold method with my sourdough, because I actually enjoy it on a slow day. I will plan to make bread on those days I am not busy, and I enjoy "tending" to it, lol. You don't bug me at all! I love to answer questions when I can. I do find differences in my baking. The moisture of my recipes varies if I am in Palm Springs, CA dry desert or humid Florida. Also, when we went to Yellowstone with the high elevation, my baking times varied. I just learn to look and feel my dough as I bake with it. I think this is what forced me to learn that, just going with the flow of each climate, and how I need to adjust it. Hope that helps!

    I made these and did not brown the butter , just melted it nor did I refrigerate the dough prior to baking and they turned out great .
    Oh yea I also used coconut sugar in replace of brown sugar .
    Very much enjoyed .

    Definitely interested in Einkorn recipes! I’ve used it in sourdough but I want to bake other things with it since my kiddo and I can tolerate it (we are gluten sensitive) Thanks!!

      Yes! I have heard from so many people that they can tolerate the Einkorn and not other wheat varieties. I am so happy you found something that works for you and your kiddo!

    I JUST got my mill & my 1st recipe was your tortilla w/ milk & vinegar. It was a hit! I think this cookie one will be next!…but only with soft white…I don’t have einkorn.

Soft white will work, but you may need to add a tiny bit extra flour, When using soft white, I always tend to need a bit extra flour. Just mix it, and see if the texture of the dough is like the video. I hope that helps! Happy Baking!

    Do these work just the same if you use soft white wheat berries.

      I make these with soft white wheat often, yes! If you are going by weight, it is the same amount, if going by cups, you may need about 1/4-1/2 cup more flour with all soft white wheat. Let me know what you think! Happy Baking!

      yes, I find it interchanges with the soft white pretty well!

    I love Einhorn flour, and really because it is an unadulterated food, which is why most of us with IBS or gluten intolerance can digest it!

    I’m just getting into using Einkorn.
    You said 2 3/4 c. Flour, but your printable recipe says 2 2/3 c. Which is correct?
    Until I hear I guess I will just weigh out 365 grams and hope for the best 👍🏼

      When in doubt, the written recipe is always the correct one, because if I make a mistake on the video, once published I can't change it. But, I can update the printable one. But, really you are right on track, weighing the flour is the best way to go!

    What does einkorn taste like?
    Is it a soft grain?

      It is not really a soft or hard grain, it actually falls into the category in the middle somewhere as an ancient grain. I talk about the different grains in this video if interested. Everyone has their preferences. My favorite ancient grain is Kamut (Khorasan Wheat). And you will see me using it in a lot of my recipes on my website.     You’re in an RV?! Is that where you live full time? Where do you store your grain and how much at a time?

      We do live and travel in an RV, and have been fulltime traveling since 2015. I have some 5 gallon buckets of grain, and some smaller buckets of grain. When we pass through areas that I know I can get grains in person, I will stock up and fill my buckets. It can be challenging at times, but we make it work! Happy Baking!
