Thanks for that nice video. One suggestion: use parafilm or buddy tape instead of that relatively rigid PVC film. They are much easier to use and offer better result.
Those scions are horrible. You need to get them when the buds are swollen. Those looked like they were too far beyond that. Trust me, I have 45 successful avocado grafts in my yard this year. You also don't want them that big. Smaller ones are better (3 to 6 inches long).
You probably should have reduced the size of the scion, then used tape to totally seal scion from drying out, then do the graft and forget the bag cuz you won’t need it
Avocados don't grow true to seed and can take 10-20 years to fruit when grown from seed (if they ever fruit). You graft to get a known good variety that will bear in a couple of years.

Yes, this I have learned. None of these took. I ordered these online. Smaller is definitely better. Thank you for the input - I learn by experimenting

Yes you can. We do get cold snaps here in the middle that are harmful to many tropicals though.
