Love this, Amy! Praying for you and your family this morning as the hurricane gets closer to Florida. On a different note, sometimes as a meatless variation of fried rice at our house, I cook up some rice and scramble some eggs and then saute a can or two of green beans with some garlic, onion, and soy sauce (fresh if I have the garlic and onion...powder if I don't) and then add the rice back in and season to taste with salt and pepper and then throw my eggs back in at the end. The original recipe calls for a pound of ground beef but sometimes I just leave it out. It's a recipe from a friend I got 20+ years ago when I was young and single and now my family and I get to enjoy it together. ❤
