I've joined the Behind the Scenes Tour at Sydney Fish Market last April in 2024. I watched the Auction and the process of the making Sashimi Preparations. It was great and wonderful. although the price of a dozen of Rock Oyster is liable to go up by 5 A$ in one month.

It must be an awesome tour to participate in. Price is going up everywhere unfortunately. But they have discounts every now and then as well.
