    Inhad to laugh when you were using your cheese grater to grate your carrots. I almost never buy whole carrots I only ever buy the matchstix carrots in the bag. I’m almost yelling at my iPad screen you can buy them already shredded, you can buy them already shredded. I know that you know that but I just found it funny that I was trying to offer you tips on cooking. I never ordered that particular soup at Olive Garden either,I stick to the salad or I ordered the Toscana.

      Yes! You definitely can just buy shredded carrots. We actually eat soooo many carrots here though. I eat them every day. I buy a 5lb bag probably every other week. So we always have them on hand.

    Amber, it looked a lot like chili at first. I am anxious to try it out. I do like the small shell macaroni you used. You 2 should cook together more often. It's fun to see how you interact with each other cooking!😀

      We used to have Fazoli’s in Arizona. My children truly loved anything from that restaurant. The breadsticks competed with Olive Garden and were requested frequently!

    We have a Fazoli’s near us! The bread sticks are my favorite! We ate at one when we were on vacation. The soup looks good!

    I have been making mine for over 20 yrs. It’s loved everywhere I take it.
    Pamela's Pasta e fagioli
    Cooking Time: 1 hr 10 min
    Servings: 8
    1 lb lowest fat ground beef
    1 sm onion diced
    1 lg carrot, julienned
    3 celery stalks, chopped
    2 cloves garlic, minced
    2, 14.5 oz cans diced tomatos
    1, 15 oz can great northern beans with liquid
    1, 15 oz can red kidney beans with liquid
    1, 15 oz can tomato sauce
    1, 12 oz can tomato juice (I use low salt)
    1, 12 oz can V-8 (I use spicy)
    1T white vinegar
    1 1/2 t salt (I leave out)
    1t basil
    1/2t pepper
    1/2t thyme
    1/2 pound ditali pasta

    DIRECTIONS
    1. Brown ground beef and drain off any fat
    2. Add onion, carrot, celery, and garlic and saute for 10 min
    3. Add remaining ingredients except pasta and simmer 1 hr
    about 50 min into the simmering, add the cooked pasta (drained)
    4. Serve with fresh grated parm cheese

      @@FeedingtheByrds we dump liquid and I noticed that you didn’t. Is there a reason you rinse your beans? There is so much flavor in the juice plus that might be why you were missing salt.

    My college roommate's mother use to bring us pasta fagioli when she'd come to visit (around midterm time) along with chocolate covered pretzels. I have never had Olive Gardens version. My husband and I stick with the chicken gnocchi soup and Zuppa Toscana or sausage and spinach soup as I like to call it......lol

    My grandparents used to make the best pasta fagioli and for the longest I was trying to recreate it and finally I figured out it was because they used half hot Italian sausage and half beef. I'm not even a huge fan of sausage but now it's the only way ill make pasta fagioli I highly suggest trying it...if ur not into spice at all use sweet Italian but the hot goes really well with this soup

    One of the reasons your soup needed salt as the “Jared spaghetti sauce” has a ton of Sodium(it’s why I make my own too) . Your Pasta Fagoli looked amazing.

    Looks good! One of the reasons I got a kitchen scale is that I always added more pasta than the recipe called for and then adding more broth/water to make it more like soup.

    Very different recipe than the one I learned from my Italian mother😅😅 It’s much simpler, sauté onion, garlic and shredded carrot. Add a carton of chicken broth, a 14oz can of diced tomatoes or crushed tomatoes, 1 can of drained and rinsed cannellini beans, half a cup of any small pasta, a sprig or two of rosemary and salt and pepper to taste. Simmer for about 30 minutes. There’s no meat in my mom’s recipe, it’s to die for. It’s soupier than this one, if you want it thicker, puree some of the beans before you add them to the pot.

    This is my go to soup at the olive garden. And like your husband I hate onion but can tolerate them in this soup. Now if it had peppers in it, that's a hard pass. I will definitely be trying this.

    Good evening Ms. Amber & hubby, I live in Alaska and it's 9:17pm here, where u are, is it 12:17 or 1:17 am? Ur "heavy on the pasta" soup looks delish, I have the feeling I'll be making it throughout the up-coming winter months!! I'm like u, when we eat at Olive Garden, I only get the chicken gnocchi soup, it's almost magical how good it is!! About a year ago, my youngest daughter and her boyfriend had dinner there and asked if they could bring me anything. I only wanted the soup, come to find out, u can order it as just one serving OR, by the gallon, um yesssss and Amen (Jamerrill Stewart/Large Family Table, says that, even has it on tees, sweatshirts, tote bags, mugs, water bottles, even a hat please and thank u!!) I was wondering if u have either a copycat or ur own recipe for Minestrone soup. It's my daughter-in-laws favorite and I'd like to surprise her one night when she and my oldest daughter come over for dinner!! She admits she's a picky eater, never ventured out trying diff foods from around the US so she's wary about trying some things! I've had a tough road to hoe trying to make food she'll eat and I really want her to know she's special to our family, cooking is my "love language"!! I'd appreciate it so much if u have a recipe u'll share with us!! I found ur channel through Mandy of "Mandy in the Making", u two were doing a collab video and so fell in love with ur vibrancy, smile, kindness, personality and am now a subscriber!! Please don't change who u are, how u cook, ur very existence as there will always be some douche puppy out there that have bad days on the regular!!     Let me tell you about Fazolis’s!! I live in SC. Every 6 months we have to go to Columbia for my son’s doct appt & we stop at Fazolis’s every time!! I have to watch when I mention that to my co-workers b/c they’ll xfer money to me to get them some too! And let your husband know those breadsticks are still good 😊
    Not a fan of the gnocchi one b/c I don’t care for dumplings at all. Never liked chicken & dumplings growing up but my family loves it. The one w/ sausage is Zuppa Toscana which is my favorite

    Good Recipe to Copycat ... :) Having made this, I add chix stock ( not broth , because the chix stock actually brings out the flavour of the meat. I've made this with Sweet Italian sausage, as well. )I add sautéed diced onion, I add fresh grated Nutmeg,( don't need very much) ; finely grated Parmesan , chopped or dried Basil .
    I don't like the pasta shape in the Original, I use either the shells , as you did or something that will " grab " the sauce .
    I think y'all did a fine job , it's so sweet to see you two cooking together. 👏🏻👏🏻
    I also garnish this with a bit more shredded Parmesan, and the fresh Italian parsley. Bon Appétit!

      @@FeedingtheByrds .....aww. so kind ! Yes, it is delicious, and served with crusty Sourdough or a baugette... yummm. Lol. I usually opt for using a Stock in my Recipes, it adds a depth of flavour that you can't always get with a Broth. Although, the Bone Broth works well, also. You can actually make your own Chix. Stock... I used to make it a lot,but now that I don't have children living at home and all that , I just normally buy it ... but I have made it a few times in the past.

    TOMATO PASTE!
    A heaping tablespoon of tomato paste seared on the bottom of the skillet before the liquids are put in would give it a deep rich UMAMI flavor

    I have never had it made with Ground beef. Usually it is made with Italian Sausage which gives it alot more flavor.
    When I make it I brown
    1 lb Italian Sausage. I get 1/2 lb Hot Sausage and 1/2lb of Sweet Sausage
    1 diced onion
    2 cups shredded carrots
    3 ribs diced celery
    1 tsp salt
    1/2 tsp black pepper
    2 tsp Italian Seasoning
    1 qt Beef Broth
    2 cloves minced garlic
    2 Tsp chopped rosemary
    1 Tsp chopped oregano.
    28 oz can crush tomatoes
    2 cans rinsed and drained cannellini beans
    3 cups ditalini pasta
    2 Tbsp chopped parsley
    Brown the sausage. Leave about 1 Tbsp of the sausage fat. If you do not have that, add 1 Tbsp of olive oil. Add the onion, celery and carrots. Cook 5 minutes. Add 2 cloves minced garlic. Add everything else except the beans and pasta. Simmer 20 minutes. Add 1.5 cans of the beans and the pasta and Simmer everything together . Just cook however long the pasta requires. Add 3 Tbsp of water and the other 1/2 cans of beans and puree the beans. Add to the pot with chopped parsley. The beans thicken the soup. Top with shredded parmesan cheese.

    Is it bay leaf that you’re missing? Maybe they cook it with bay leaves and then take them out before serving.

    The spice they used was probably Cumin. If you added more beef broth it would have been more like a soup which it's suppose to be.

      Yes we agree. But we honestly really liked the consistency! So even without the rest of the broth, it was tasty!

      Yea. We actually really liked the consistency but if you want it to be more soupy, I would add more.
