  • Two tips for the KME sharpener
At 4:10 I say “higher grit stones” when I actually meant “lower number and more grit.......the rougher stones”

Take a picture with your cellphone of the angle and one of where the knife sits in the jaws for each of your knives. Make a separate file on your phone. Helps me keep up with things.

The biggest KME improvement is the Gritomatic stone holder that allows you to use 6" stones. You have so many new stone options that just are not made in 4"

Yes you can use a 6" stone but your not able to use the full stone ....so why bother.

Still awaiting delivery of the KME I purchased. It will be my first ever "system" sharpener.
I have been researching the system devices for over 5 years now.
The KME is the most versatile system on the market for the intended purpose. ( In my humble and novice opinion )
Your "hacks" make complete sense and add to the versatility of the device.
I have learned during my research that the small and crummy knobs are intentionally provided to keep fingers and hands on top of the plate carrier for the safety of the user.
However, like you, I am going to swap out that tightener knob!!

Dean O did the reverse mechanism hack roughly 8 years ago. Matt over at knife crazy did the ball replacement hack about 4-5 years ago.
I used to be a fan of the kme....had one for little over 7yrs.....fell apart about two months ago.... luckily I have several systems that can use kme format 4x1 stones among others.
The system gets much hype as being economical, but realistically it's over priced.
If you plan on getting the chosera stones, I recomend buying from gritomatic....at least their stones have a backing plate where the kme does not...learned hard way with that....after just three usages 4 stones cracked in half....when your paying nearly $300 for the set...that becomes a big ouch...I complained, was told replacements would be shipped.... never happened so I just ordered replacement stones....and again after few uses same issue.
If you look at their lapping films....that is a joke. $15.00 for 5 strips....please.
Also their emulsions are over priced as well as their kangaroo strops. $19 for a 4x1 when gritomatic sells a 6x1 for $12.
That's why I do not and can not recomend the kme....if you go all in you are easily near $1000 I believe I spent $1200 but I also purchased several 6x2 bench stones.
    So bottom line....buyer beware.
I hope you don't have the issues with them that I had.
I will say the gold series diamonds are top notch as are the Arkansas stones....only because those come from dan's whetstone's.
    Good luck on your journey

Does it matter what oil i use for sharpening,do i need honig oil or i can use just cooking oil?

    • @roycemark
      @roycemark 4 ปีที่แล้ว +1

Although I believe that some people use oil for sharpening, I do not. I think that most who use the KME system do not. I use mineral oil to CLEAN the stones when they get dirty with metal filings. Take a few drops of mineral oil on the stone and spread it around with your finger. You will see the metal filings lift right off of the stone and you can wipe it off with a rag.
