I love the way Marco communicates his passion and love of food, he is without doubt a truly great chef but for me what really sets him apart is the way he simplifies cooking so that people without experience can create amazing food. This recipe is a good example, I looked at another recipe by a well known TV personality cook, the list of ingredients was as long as your arm and included wood fired roasted grapes! As for stock pots and cubes I now use them all the time, I've currently got Marco's chilli con carne simmering away, it looks and tastes amazing. Hats off to Marco, in my opinion Britains finest chef.

Apples with sharpness, work better I find. So typically green apples are used. I've had some red/yellow apple variants in waldorf, they don't work as well. The sharpness makes it taste fresh instead of the sweet richness. If the apple is firm and has some sharpness, it should work either way, your choice, really.
