Triggerfish are pretty smart. I spent a couple of weeks in Grand Cayman a long time ago and would snorkel in an area near Rum Point almost every day. There was a huge Queen triggerfish that would follow me around the whole time because I'd turn over rocks and it would find critters like brittle stars for it to eat. WOW that smoked fish was easy! I've only ever seen it done the Alaskan way, with a dedicated smoker, that takes hours and hours. Yours is a much better method 👍
Baked trigger fish Pre- heat oven to 375 deg Gut and de-gill Wash season of your choice in the cavity and on the skin Wrap in foil or cover with foil in a baking pan. Bake for about 25 mins. Peel off the skin and eat off the bone. Can also grill in the skin. Great fish for kids because of the lack of small bones

Never thought about using mayonnaise in smoked fish. Something new for me to try next redfish or snook. I typically use soft butter, then use a blackening seasoning. You can’t beat that and now I am going to try mayonnaise. I also do grilled cheese sandwiches with mayonnaise and no one has figured out why my grilled cheese are so good. Got a new recipe today! Steven I noticed you climbed on your trailer to hook up the winch strap. Have you ever looked into the Dratto latch? Easy install and works like a champ. I’ve had one for 2 years and it awesome.
Before you cut the fillet off the trigger fish run the tip of the knife down the belly then grab the corner of the skin and pull it off. Then fillet the meat off the backbone.
I've have been trying all year to figure out how to catch a king mackerel or Spanish mackerel. I've never caught one ever. But when I figure it out, im ready to try this
I got a nice king once and did a salt brine, then we smoked it. Way too salty. Now we just make smoked king dip and call it good. My neighbors are from Columbia and they will take any extra king that we don’t use. They give me eggs from their chicken coop. Win win.
Great video as always. I wish you would have showed the cost of fuel you used. Just to give us an idea. I imagine it’s not cheap. I’ve never tried mayo as a sticking agent. Very interesting. I’ve always used mustard

Triggerfish are very plentiful in the gulf. But also very regulated because they are one of the only predators that go after lionfish.
Steven, we always see you saving the fish carcasses for crab bait, but we don't see the crabs prepared for meals. How about a crab catch and cook?
