    I was looking for the perfect cauliflower puree video.
    I watched Guy Fieri. I watched Gordon. I watched Anne Burrell. I watched Dan Barber. I watched Michael Voltaggio (who didn't do puree, but did cauliflower steaks so it was on the feed lol).
    Then I came upon your video, and I am making this recipe tonight! I am a happy new subscriber. :) Thank you!

    Had this with seared ahi tuna and Szechuan sauce at a restaurant and it was perfect. Def gonna make this purée some time. I’d try it with carrot, broccoli, or pumpkin too

    Ingredients for Cauliflower Pureé
    1 head of Cauliflower (Cut into small pieces)
    1/2 of a yellow onion (small dice)
    1QT while milk (to cover)
    3TBSP unsalted cold butter
    Dash of nutmeg
    1/2tsp cayenne or white pepper
    Salt to taste
    Directions
    1. Place cauliflower firmly against cutting board and remove florets from stem.
    2. Cut florets into small pieces and set aside.
    3. Cut half of an onion into small dice and set aside.
    4. Add Cauliflower, onion and salt into a large pot and cover with milk.
    5. Place lid onto pot and cook cauliflower on medium high heat until tender about 10 minutes.
    6. Drain cooked cauliflower and transfer to a blender.
    7. Remove cap from blender and place towel over hole to release any trapped steam during blending process.
    8. Add in cold butter, nutmeg and cayenne and blend until smooth.
    9. In a medium size bowl, strain pureé through a mesh strainer.
    10. Transfer pureé to a small sauce pan.
    11. Taste to adjust for seasoning and serve warm.

    Hey man. How llong do you think I can keep that puree in the refigerator at +4 degrees celcius befoer it goes bad?

      Sorry about the late reply. But it keeps for about a 3 days before it goes bad.

      For this particular method, yes. You don’t want the cauliflower to taste like pure milk.

    It's a shame that this video is an exact copy of Chef Petrale sole's video about cauliflower puree you even say the exact same stuf.. I hope the food you serve has more creativity in it. It did look great in the end though well done.

      Not sure who that is, but most purees are the exact same.
