Loving your recipes.. would love you to take your camera out and show us the environment you are living in, your town and countryside.. Cheers from Australia 🇦🇺
What a coincidence, Lorraine. I took my camera with me to the mercado today so you will see where I shop in an upcoming video very soon! Cheers, Caroline
Wanted to let you know how much I appreciate your videos. Simple but well thought out recipes and advise - encouraging and cheerful presentation. Very well done.
Hi Sondra, so sweet! Thanks for the positive comment. My hair is always a bit of a translation experiment since I have a little trouble understanding my hairdresser’s accent! So I go with the flow and am (usually 😉) happy with the result…Cheers, Caroline
Goog evening. It looks so yummy 🥰🥰🥰congratulations ❤ Ive got a question :i live în România, and since we are not a mediteranean country, what other veggy can replace artichokes??? Thankyou
Hi Carmen - That sounds like a great idea! I’d be interested to know how it turns out. Best of luck with your Mediterranean kitchen test! Cheers, Caroline
What did you do with all the artichoke leaves? I love eating those too! Did you just cook them up on their own? I always do it while the artichoke is whole. And where did all that artichoke fuzzy stuff go? You didn’t seem to have any.
Hi Zoe - I used smaller spring artichokes which are increidbly popular in Spain and the Mediterranean during springtime, not globe ones that you are probably more familiar with so there are two differences…no fuzzy stuff in the heart and no leaves with meat on the edges. Hope this answers a very good and really logical question! Knowing that globe artichokes are probably much more well-known in the US, I should have mentioned these differences. Thanks for asking the question that allowed me to clarify it. Cheers, Caroline
HI V - and thanks for the question. Actually I do have a few since my Thermomix is one of my go-to-tools in the kitchen. I should have a playlist but instead I can direct you to this search result! www.youtube.com/@mediterraneanminutes/search?query=thermomix
I think that you should mention NOT to throw away the outside leaves of the artichokes; boil them and serve with a lemon butter sauce (you have to pull them through your teeth for the 'meat', then the left overs can be discarded--or used in a vegetable soup boullion (at some point they will need to be thrown away)...dts/usa
HI Dana - I have never tried cooking the petals from baby artichokes but anything’s worth testing and it’s still spring artichokes season here so I’ll give it a try. I always did that with globe artichokes because there is meat in the base of the leaves. Thanks for the idea. I’ll give it a go next week. And whatever we have in organic matter, it all goes back to the mulch pile and back into the garden, so no waste! Cheers, Caroline

Hi and thanks for your question. I might give broccoli or cauliflower a try but of course frozen or canned artichoke hearts would work too!
Delicious 😋
Thanks, P Mom! Always nice to hear from you…Cheers, Caroline
Looks so yummy, I might try it with boneless pork chops.😘

Of course another yummy looking recipe, I am not familiar with artichokes, trying anyway. Thank you.
Hi Sandra - This recipe might win you over!

I’m actually in Canada, but all the same, wish we had those spring ones here! I’d love to not have to deal with the fuzzy stuff! 😁
Do you have any healthy Thermomix recipes? Thanks.

this dish would also be good with fresh spinach placed in the dish at the end...dts/usa
Excellent idea, Dana! Thanks for the suggestion, I’ll go for it next time I make it and I’ll bet others will try it that way too. Cheers, Caroline
