ROAST BEEF PO' BOYS Angus Chuck Roast (3lbs) Kosher Salt & Pepper (to season roast) Flour (to coat roast) 1 & 1/2 Tablespoons Vegetable Oil 1 Yellow Onion 4 Cloves Garlic 1 Cup of Water 1 Box Onion Soup Mix (2 packets) 1 Tablespoons of Worcestershire Sauce 1 Tablespoons of Pickapeppa Sauce 2 Tablespoons of Cornstarch 1/2 Cup of Cold Water. Softened Butter Po-Boy Buns Mayonnaise Lettuce Tomatoes Pickles Start out by heating a pot on a Med/High heat. Chop the onion and garlic, set aside. Generously season both sides of the roast with kosher salt and pepper. Dust all sides of the roast with a light coat of flour. Coat the bottom of the pot with vegetable oil. Sear the roast for 6-8 minutes on each side. After the roast has seared on each side, remove it from the pot, and put into a bowl off on the side. Add your onions and garlic to the pot. Begin stirring to break up the drippings. If things really seem to be sticking to the bottom, then add a small amount of cold water to help break things up. Sauté for about 25-30 minutes. Meanwhile, mix the water, both packs from the box of onion soup mix, Worcestershire Sauce, and Pickapeppa Sauce. After 25 to 30 minutes of sautéing, add a small amount of the mixture to the pot. Stir to break up any remaining drippings that are stuck to the bottom. Add the roast back to the pot and pour the rest of the mixture over the top of the roast. Raise the heat so that it comes to a boil. Once you’ve reached a boil, cover, lower to a simmering heat, and let cook for 2 hours. After 1 hour, flip the roast so that the other side cooks down in the liquid. After the 2 hour mark, slowly remove the roast, and place in a bowl on the side. Mix the cornstarch and 1/2 cup cold water in a bowl. Add the cornstarch mixture to the pot of gravy by pouring and stirring at the same time. Tear apart the roast, and then add it back to the pot. Cook for another 30 minutes. Just before serving, spread butter on your po’boy buns, and place butter side down on a hot griddle or pan. Once you’ve achieved a golden brown color, remove, and dress your po’boy how you like. Enjoy! 😊

The 1st time I had potato king I thought this can't be real. Man every time we went to Kenner which was once a month to spend a weekend there with family, we would stop at potato king and drive back to Lake Charles. That place was the best to ever do it.

Oh My Word!! This is awesome!! I adjusted my seasonings. I don't care for all the onion soup mix, I used an envelope of dry italian dressing mix and an envelope of dry ranch dressing mix in their place. I added sliced mushrooms halfway through cooking the onions. Loved it. With the leftovers I'll be making a shepherd's pie. Can't wait for that!! Thanks. Made this last night and then let it sit in the fridge overnight because EVERYONE knows this kind of meal is better the next day!!!! God D$$n it was good!!!! Followed the recipe except for a few small variations. I added one chopped red pepper with the onion. I only used one package of soup mix because that stuff is super salty. I also used half water and half beef stock to simmer the beef and make the juice. We can’t find Nola French bread here in Los Angeles but fresh Mexican bolillos come close. Had an amazing po boy tonight and will have the leftovers on rice tomorrow. Now if you can send me some Tasso and Andouille I can get me a proper pot of red beans going!!! Gonna try the smothered pork chops next. Thanks for these great videos!!!
I love using Leidenheimer's or Rouses bread, and put mayo on the bread sprinkle with cajun seasoning then sear those bad boys! I can taste these po boys through the screen!! C'EST BON!!!
1st time making roast beef poboys. Used a bone in and skipped the deglazing/constarch since it was going to simmer for 2 hours in sauce and i went a little heavy on the initial flour. Used heinz worsch and A1 and forgot to add the onion until it was too late. Turned out excellent. The onion mix I used might have been too salty (wally world only had 1 choice so close to the last hurricane) so I'm going much lighter when I salt for the pan sear and adjust the amount of mix that goes in at the end. Hopefully they have salt free mix and then I can add salt to taste. Also going with pickapeppa instead of the A1 next time, heck maybe double the pickapeppa and scratch the worsch. Otherwise my wife said it blew her mind about 100 times, because it beat her life-long favorite poboy shop in Da Parish and the kids wiped it out. Like the recipe, very easy can be done in one big skillet if it has high sides. Simple but has enough stuff you can mess with to make it your own. Im sure I will be cooking this weekly for awhile and getting the mix just right. Get frying kiddies!

ROAST BEEF PO' BOYS
Angus Chuck Roast (3lbs)

A note, a proper, authentic po-boy is served on french bread. Not buns. Everything else about this perfectly makes the roast beef how it should be.
