Why did Richard react like that after Arjun castled long??

Because it was a very smooth move. It removed the pin against the rook, so that the bishop on b4 was now hanging. It also moved the king away from the open file and from that bishop x-ray, even though it wasn't a problem at the moment.
Rapport was trying to prevent Arjun from castling short with the Qb6 move, but long castle looked a little iffy because all of black pieces were attacking on the Queen side. Rapport probably thought he would eventually try to castle short or not castle at all.
