I noticed that you placed a foil wrapper on the lid of the pot; what does it do to the okpa? Also, the bottom of my okpa is usually more stronger than the top. Please, what can I do to make it evenly soft? You suggested turning it in the video; how long do I turn it so it wouldn't settle and leave the bottom strong?
The foil is just to retain the hear so it cooks in less time, kinda like a pressure effect. For your okpa not to settle , there are two things : 1) start off with the water boiling as you put in the first tied okpa. That way the boiling warm water gyrates the entire mixture and there will be no time for uneven settling. 2) you can flip the first set of tied okpa around once or twice as you tie them. Hi Amarachi I’m really sorry to hear this : suggestions / questions : Did you cook in high or medium heat ? Would recommend high heat. How long did you cook it for ? I recommend cooking for at least 45 mins on high heat, 1 hr to be sure. Also : cook with plenty of water and keep topping up with hot boiling water. Okpa isn’t steamed, it is boiled, unlike moi moi. Also could I suggest you turn the okpa from time to time and don’t steam. It needs to BOIL to be able to evenly cook the okpa. Good luck dear. Try again and it just might be perfect.

This is not okpa Enugu. Okpa Enugu doesn’t have onions and maggi.
