These look tasty! I've made strawberry using homemade jam. Very good! Tip for adding something like lemon curd in the middle: use a smaller tip for the buttercream and go around the edge of the cookie in a circle, leaving a hole in the middle. Fill in the hole with jam/curd and then put the 2nd cookie on top. The buttercream will keep the filling in without making a mess!
I must profess to prefer macaroons over macarons but that is because I am a coconut freak. Looking great Barry, definitely not easy to make even as a professional ❤
I alway run my almond meal through a blender on very short pulses before sifting it. This makes the almond meal even finer. I have found that this gives the macarons a smoother finish on the shells.

Barry I dont think you whiped the egg Whites enough. Also blending the almond powder and icing sugar in the food processor will be even more better than just sifting.
I've done five batches in the last two weeks and they are tricky things. Every batch gets better and better and you keep learning new things to do. Try also doing the Italian meringue way. I've had better success that way. Keep at it!
Wondered about using concentrated fruit drinks for favouring. Those tiny bottles where you only need a few drops. Tasted the lemon one undiluted and Wow!
I was wondering where you got that electric whisk. I really like it and as I have misshapen fingers due to psoriatic arthritis in my finger and wrists, I think that whisk would be easier to use. I'm 41 and have suffered from this debilitating disease since I was 16 yrs old. I love to watch all your videos!

I couldn't wait till you posted video for this ever since I had heard about it in one of your other videos ;) I have a couple of questions: 1) if you weigh out 100g of almond flour then sift it, then find out there were a few lumps that couldn't be sifted out- 'technically'- you would lose the weight in almond flour- so am I wrong to think it would be better to sift then weigh it out? OR am I making making this TOO complicated? AND my second question- as far as I know, me being in Canada- I haven't heard 'Dip Dab'- what can you use as a substitute? Can juice crystals be used or shall I shop in Amazon?
Dan Blundon I’m in Canada, and everyone I know calls them Macarons. The coconut cookies are Macaroons. Great job Barry! Macarons are fiddly, but yummy, and worth mastering to impress your friends and family!
Lemon deserts are my weakness, and put it in a macaron shape it's like an ultimate weakness now. I've got to try these sometime, but I have horrible patience with making deserts. Oh well, can't hurt to waste some ingredients lol EDIT: Also, does anyone know if packets of lemonade drink would work just as well as the candy powder he used? I live in the U.S., and the closest to that I have is fun dip and I've never seen lemon flavored fun dip before.
Someone on another comment said something about citric acid. It would have the zing you're looking for but I dont know if it has the flavor. So you might try a combo of the lemonade powder and citric acid?
i tried making macarons once, but i added the liquid ingredients into the dry (so, backwards) and it was HORRIBLE like.. i didnt even bother trying to bake them lol
so Macaron's are different to Macaroons ?? or is it just a spelling mistake ? I don't like the coloured ones.. They always look like make-up sponges. I prefer the traditional blown flat ones on rice paper and have a almond on top.

Meringue powder will stabilize better than cream of tartar.

What is Sherbert as you’re using it? Is there an US equivalent?
You could try citric acid. Sherbet is a sweet powder that has a tingly feel on the tongue. Citric acid would work, but use it sparingly.

Kelsey Elizabeth its just a powder that is quite sour and tingles the inside of your mouth. Think of it like a weak citric acid.

Grogzilla I've heard of people using ground pumpkin seeds in place of the almond flour. I haven't tested it myself so I'm not sure how well it works
