The resistor is just for current limiting to prevent damage to the circuit, the meter is just there to show continuity between source and drain like a switch. Battery + with resistor gets connected to the source pins, the negative side of the battery where he was pulsing the pin connects to the gate to close the switch between source and drain. Think of it like a water valve, the gate is the valve to turn the water on, the source is the incoming water and the drain is the water coming out the tap. The meter just shows the flow of current starting and stopping with the gate control, proving it's a valid component.
